I've had this halibut in a restaurant (exact recipe...the chef featured his recipe online). It was delicious, and now I'm wondering if you think the herbs would go well with salmon, cooked the same way and everything.

Fish is pretty versatile, so it should be fine. Just remember salmon is oilier than halibut. And you wouldn't want to use stronger tasting fish.
