Salmon recipe for 8mo son?

I don't eat fish, at all. So I have no idea how to cook it for my son, or what to serve it with.





I have two salmon fillets in the fridge (one for him, one for me - trying to start eating fish, new healthy eating regime I'm on) and was thinking of baking them?

i used this recipe for the first time i gave my little one fish, it was also the first time i cooked salmon as he is a bit older you now you cound break it up it small chunks in stead of purreeing, :)Salmon recipe for 8mo son?
you can pretty much cook salmon in any way you'd cook chicken.





when we have it at home i usually pop it on a really hot griddle pan skin side down first until the bottom half is opaque and then flip it to finish off the other side. when the fish is opaque it's cooked. like chicken!





good flavours are lots of soy and chilli, although LO might not like that, he can have it plain. cook with soy and chilli in the pan, or marinate in a freezer bag for a more delicate flavour, add ginger and garlic if you're feeling adventurous!





i usually serve with lots of grilled or roasted vegetables, just pop them on a tray, splash a little olive oil on and grill or roast in the oven for 20 - 30 mins





good veg to roast are





onion cut into rings or quarters


baby tomatoes (watch them with LO, they'll be frikking hot at first out of the oven)


sweet potato


red peppers


peas %26amp; sweetcorn


carrot





and of course potato wedges! even halved new potatoes are good in the tray





or any of your other favourites





salmon is also good cooked, flaked and mixed with pasta and a little mayonaise. don't ask why, these flavours just work really well together!

EDIT - hahahaaaa...... you said dill weed!!
If you have a toaster oven that works really well, it only takes about 3-5 minutes under the broiler if the fish is raw and not incredibly thick.





You might want to start with just a tiny bit of salt and some pepper. On the other hand if you aren't all that fond of fish you might want to put some familiar seasonings on it. Without knowing what you like its hard for me to recommend which go well with fish. Lemon pepper is common, orange or cranberry is also common, Jerk isn't bad, etc.
I would suggest poaching, because it's harder to overcook than baking.





Put 1 inch (or half as deep as the fish is thick) of low sodium vegetable broth, water, or a half-and-half mix of both in a pan. Add lemon juice and dill weed. Heat the liquid to a simmer, then add the fish (skin down if it's a filet). Cover, then cook until the fish flakes with a fork. Make sure there are NO bones in your son's fish, but you don't need to mush it up. It will be soft enough for him to feed himself, if you cut it into pieces he can grab with his hands.





Add butter to yours, and dill to both of yours.

I have two ideas my son loves them both, (he is 10 months now).





1. De-seed and skin three to four tomatoes then cut up into small pieces, Saute in butter until soft,. Put the salmon in a microwaveable dish cover the fish with milk then cover place in the microwave for 2-3 minutes, once salmon is cooked flake the fish and remove the skin and add to the tomatoes along with the milk the fish was cooked in, stir in the cheese, if it is too lumpy for your son puree a little if not just serve.


My son wolfs this one down every time we give it to him.





2. I make a fish pie for us all, i either make a cheese sauce from scratch or get a tin of soup (broccoli and cheese is good) Cook the fish in milk in a pan for a few Minutes, then place with the milk in a deep casserole type dish pour over the soup add some veg in, and cover with mashed potato, then cook in the oven.


You could do this with just salmon, or a mixture of fish. Alfie liked it when i did it with Salmon, cod and haddock.

I have the same problem - fish grosses me out. Does he have chunky food? Purees? Finger foods?


I would think making a fish pie is usually the easiest - bake the salmon wrapped in foil (you could put some lemon and maybe some herbs in for flavour) in the oven for about 40-50 mins (ensure it's cooked throughout) and add some parsley sauce or cheese sauce Mash it and serve with some creamed potatoes? Or just chuck it all together and puree if that's what you want.

dont overcook it, thing with fish is that its fast to cook and gets flavourless if overcooked or baked. use rocksalts when baking.


If cooked for the son, then remember not to make it too spicy, or slimy, texture means a lot
Very simply saute the fillets in a little olive oil. first on the fleshy side, for about 3-4 minutes, then flip and saute for 4 min. the flesh should be firm and you will see the color change. Keep it simple, my son loves it. I have not had success at baking or steaming it, it is always overcooked.
you can cook them in the oven, wrap them in foil to help stop the smeel and also it keeps the moisture in so it doesnt dry out!


you can serve it with potatoes and some fresh mixed veg!

You should cook your son with the salmon for 60 minutes in a deep fryer. This will ensure the fingers are nice and crispy. Don't thank me for the recipe it's been passed down for generations.
