Simple salmon pasta recipe?

I have 2 salmon fillets and some pasta and would like to make a dinner with these. However I have limited funds for extra ingredients and so need a simple recipe that only has a few ingredients- but is still tasty!Simple salmon pasta recipe?
250 g salmon fillet, skinned


4 sprig(s) fresh rosemary, leaves only


陆 lemon, juiced


salt %26amp; freshly ground black pepper


275 g penne pasta


240 g leeks, thickly sliced


2 tbsp olive oil


40 g Parmesan cheese, grated





Method


Preheat the oven to 200掳C.





Cut a piece of baking parchment into a 30cm square, fold in half, then open again.





Lay the salmon on half the paper and sprinkle with the rosemary, lemon juice and seasoning. Fold the top half of the paper over and pinch the edges together to seal in the lemon juice.





Bake in the oven for 12-15 minutes. Meanwhile, bring a pan of water to the boil and cook the pasta. Add the leeks 2 minutes before the end of cooking time. Drain and return to the pan.





Remove the salmon from the oven and break into flakes with a fork. Gently mix together the salmon %26amp; cooking juices with the pasta and leeks.





Serve drizzled with a little olive oil and a sprinkling of parmesan.Simple salmon pasta recipe?
SALMON AND PASTA





3/4 lb. fresh salmon


15 spears asparagus


1 pkg. wild mushroom pasta


2/3 c. olive oil


1/2 c. freshly grated Parmesan cheese





1. Poach salmon until done and flake.





2. Cook asparagus until crisp tender. Cut into 1 inch pieces.





3. Cook pasta according to package directions.





4. Toss pasta and oil. Add all other ingredients.
Method





1. Heat oil in a non-stick pan and cook the salmon, skin-side down, for 5 mins. Turn over and continue to cook for 4 mins more until the salmon is cooked through. Remove from pan, leave to cool, then flake the fish into large chunks, discarding skin.


2. Cook tagliatelle according to pack instructions. Scoop out half a cup of cooking water, then drain and return to the pan. Toss in the salmon and remaining ingredients, loosening with cooking water, if the mixture is too thick. Serve immediately.

This is how I make my Salmon Pasta and you don't need much at all.My Partner is Italian and he showed me how to do it.It's very simple!





You will need:





Salmon (Take the skin off)





1 pack of cherry tomatoes or 6 big tomatoes or a mixture (whatever type you have)





1 Garlic clove (peeled)





1 pot of single/double cooking/pouring cream.





Herbs,salt and pepper,olive oil.





1/4 white onion





Pasta





Potato masher,saucepan,frying pan.

















1) Chop the salmon into small pieces and fry on a medium heat with a little olive oil untill cooked.(it's OK for the salmon to break up).Put to one side.





2) You will need about 1 packet of cherry tomatoes or about 6 big tomatoes.Place them in a saucepan and cover with boiling water from the kettle.Simmer on medium to low heat for no more than 5 minuites.





3) While the tomatoes are softening dice a little less than a quarter of a small white onion and 1 garlic clove peeled and pressed.Fry together in a little olive oil untill the onions are goldon and soft.





4) When the tomatoes skins are starting to become loose, pour out the water from the saucepan but do not drain every last drop,keep a tiny bit in there. Mash the tomatoes with a potato masher but be carefull not to do it too hard as they can squirt up over you.Mash into a sauce.Add a genorous dribble of olive oil to the tomatoes and also add some dried or fresh herbs,I use oregano,parsley,mild paprika salt and pepper and mash together again.Be generous with the herbs.





5) Add this sauce and the garlic and onion to your saucepan with the salmon in and cook on a low to medium heat for a few minuites,stiring always.





6) Now add your desired amount of double or single cooking cream/pouring cream to the sauce (I usually use one pot) and simmer on a low heat for about 15-20 mins.You may need to increase the heat slightly.Don't cook it for too long as your sauce will dissapear and stir almost constantly!





7) Cook your pasta as normal and reheat the sauce in time for when the pasta is cooked.Pour the sauce over the pasta while in the saucepan and stir in some freshly grated Parmasan if you like.





Now it's ready to serve and enjoy!
