Don't know what your recipe for frying them is but I suspect you can use the same one. Just mix it up and place them in a hot oven.
For me, I would use an egg, salmon, cornmeal and a little pepper. Mix, make patties, put on baking sheet and bake. I bet your frying recipe would work pretty good like that.Baked Salmon Patty recipe?
4 tablespoons butter
5 tablespoons flour
3/4 teaspoons salt
1/8 teaspoon pepper
1 cup milk
1 can (16 ounces) salmon, drained and flaked
1 tablespoon lemon juice
1 tablespoon finely minced or grated onion
1 tablespoon finely chopped fresh parsley
fine dry bread crumbs
1 egg, slightly beaten with 1 tablespoon water
Melt butter over medium-low heat in saucepan. Stir in flour, salt and pepper. Stirring, add milk gradually. Continue to cook, stirring constantly, until smooth and thickened. Remove from heat. Add salmon, lemon juice, onion, and parsley; blend well. Chill salmon mixture until thick. Shape into patties about 2 1/2 to 3 inches in diameter. Dip patties bread crumbs, then dip in beaten egg, then coat with crumbs again. Fry in about 1 1/2 inches of hot oil at 375掳 until nicely browned on both sides. Drain on paper towels. Serves 6.
Asian Salmon Patties Recipe
16 oz. canned salmon (or leftover cooked salmon)
1 Tbsp. sweet Thai chili sauce
1 tsp. soy sauce
1/4 cup mayonnaise
1 Tbsp. minced garlic
2 scallions, finely chopped (white and light green parts only)
1-1/2 cups Panko (Japanese bread crumbs) or cracker crumbs, divided
2-4 Tbsp. olive oil
In a large bowl, combine salmon, sweet chili sauce, soy sauce, mayonnaise, garlic, scallions and 1 cup of the Panko. Mix well.
Spread remaining Panko in an even layer on a plate.
Form salmon mixture into patties. Press patties into Panko, coating well on both sides.
Bake 350 degree oven for 30 minutes
Or
Heat olive oil in a large skillet over medium heat.
When oil is hot, add patties and fry until golden brown, about 5 minutes. Flip, continue to fry until done.
I would suggest you use your recipe and fry in about 2 teaspoons of oil, just enough to cover the bottom of your pan. (the size of the pan will govern how much to use)
The most important thing with frying is to get the oil to the correct temperature. A bread crumb should sizzle immediately.
The next point is not to crowd your fry-pan. The heat of the oil will automatically seal so they will not absorb a lot of oil.
I would do 2 at a time and cook them on both sides and then keep the first two warm in the oven. I am estimating you will get 4 out of your quantities.
I would consider baking them on an oiled baking sheet, and turn them after about 10 minutes.
Mashed potatoes is my preferred method.
Look to see if this recipe will do.
