Need a good recipe for salmon, please, I'd really appreciate it.?

My darling 2nd daughter had to mention that they were having a fish dinner. I love certain fish. I would really appreciate a good recipe for salmon. I have about 50 cookbooks and I can't find one that I like. NO, I didn't go through all 50, but a lot. None of them appealed to me. So, 10 pts for the best recipe, Thank you so much, Love that 2nd daughter of mine.Need a good recipe for salmon, please, I'd really appreciate it.?

Spicy Grilled Salmon with Spinach





Ingredients





2 Salmon fillets, 1/3 to 1/2 LB each, skinned





1 tsp freshly ground mace





1 tsp crushed black pepper





1 tsp sea salt flakes





freshly squeezed juice of 1/2 lemon














For the Spinach





25g Butter





2 garlic cloves, crushed





225g baby spinach leaves





juice of 1/2 lemon





pinch of freshly grated nutmeg





freshly ground salt and black pepper














Method





1. Warm the butter in a good size saucepan.





Once melted, add the garlic, then the spinach, stirring well.











2. Mix in the lemon juice and season with the nutmeg, salt and freshly ground pepper.





Cover the pan and turn off the heat.








3. Leave for 5 minutes until the spinach is slightly wilted.








4. Warm the grill.





Season the salmon fillets with the mace, black pepper and sea-salt.








5. Put the salmon on the hot grill and grill for 2 minutes, do not move the Salmon.











6. Turn the salmon fillets over and cook for a further 2 minutes, when 2 minutes are up remove it and rest for 1 minute.





7. Squeeze the lemon juice over the salmon just before serving. Serve the salmon with the spinach.

Methods/steps


Start with 3 1/2 lb Salmon, and 1 Lemon, and Salt and Pepper 1 tablespoon Oil or Softened Butter, and Lay a piece of silver foil, large enough to wrap the salmon in a very loose parcel, on a baking tray. If the salmon is to be served hot, grease the foil with the butter, or use the oil if serving the salmon cold. Thinly slice the lemon and put about half on the foil. Put the salmon on top, with a few slices of lemon inside and lay the rest of the lemon along the top of the salmon. Season generously and wrap loosely, making sure the edges are securely folded together so that no steam can escape. Put into a medium oven, Gas Mk 4,350F,180C, for 10 minutes per pound. If serving hot,, and take it out of the oven and let it stand for a further 10 minutes. If serving cold, leave the salmon in the, and foil for two to three hours. Simple Baked Salmon





need:


2 salmon filets (approx. 1/2 lb each)


olive oil


tartar sauce





Put salmon filets in a glass baking dish. Drizzle a little olive oil over the filets and flip them over a couple of times to spread the oil and get a little oil on the bottom of the baking dish and the under side of the filets.





Bake in a 350 degree oven for 15-30 minutes depending on the thickness of the filets. You want them to be cooked until they start to flake and become opaque inside, but don't dry them out.








Grilled Salmon





INGREDIENTS (Nutrition)


1 1/2 pounds salmon fillets


lemon pepper to taste


garlic powder to taste


salt to taste


1/3 cup soy sauce


1/3 cup brown sugar


1/3 cup water


1/4 cup vegetable oil

DIRECTIONS


Season salmon fillets with lemon pepper, garlic powder, and salt.


In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.


Preheat grill for medium heat.


Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.
Sweet, spicy, salty, sour鈥攋ust four ingredients hit all the flavor notes in the sauce for this top-rated dish. Chinese-style hot mustard has a sharp bite similar to that of wasabi. If you don't have it on hand, use Dijon mustard or 1 teaspoon of a dry mustard such as Coleman's.

* 1 tablespoon low-sodium soy sauce


* 4 teaspoons Chinese-style hot mustard


* 1 teaspoon rice vinegar


* 4 (6-ounce) salmon fillets (about 1 inch thick)


* Cooking spray


* 1/4 teaspoon salt


* 1/4 teaspoon freshly ground black pepper


Preparation


Preheat oven to 425掳.


Combine first 4 ingredients in a saucepan; bring to a boil. Remove from heat.


Place fish on a foil-lined jelly roll pan coated with cooking spray; sprinkle with salt and pepper. Bake at 425掳 for 12 minutes. Remove from oven.


Preheat broiler.


Brush sugar mixture evenly over salmon; broil 3 inches from heat 3 minutes or until fish flakes easily when tested with a fork





note buy the salmon with the skin on, cook with the skin down--- it's very cook for you !!
A super easy marinade for salmon is to take maple syrup, soy sauce, and crushed garlic (and a bit of pepper if you like). Mix together and TASTE before adding to the fish. Different soy sauces and maple syrups have different amounts of salt and sugar, which will alter the taste. Ensure that it's balanced to your liking before adding it to the fish.





Put the fish in a ziplock bag and pour in the marinade, distributing it evenly. Let sit for at least 30 minutes. Toss on a hot grill pan and add the rest of the marinade tot he top of the fish (this will candy coat the ourside of the fish).





Serve with your favourite veggie sides. A green pea, red onion and Parmesan cheese risotto works well, as does asparagus, a light salad, and garlic mashed potatoes.

Also, I bake salmon and drizzle raspberry viniagrette on it about 5 minutes before it comes out of the oven. I love salmon!!
Sure wish we knew what those recipes contained that you didn't like.





I made this for dinner the other night it was sooo good. Then the next day I flaked it into wraps, with lettuce a mustard and mayo sauce, tomatoes. Then from there I mixed it wth some cream cheese, and mayo, green onion and seasonings for sandwich spread/chip dip.





1 tbl brown sugar


1 tsp honey


2 tsp unsalted butter


1 tbl soy sauce


2 tbl Dijon mustard


1 tbl olive oil


2 tsp grated ginger





The Salmon


1 x 2 1/2 lb. whole salmon, fillet








I just baked mine and served it over rice.
Well I don't really use a recipe I just made this up and it works for me





1 Salmon steak


1 juiced lemon


1 clove garlic, minced


1/4 cup olive oil


1/2 tsp dill





Put your salmon steak in aluminum foil. Add lemon juice, minced garlic, olive oil, and dill. Bake at 350 for 30 minutes. Serve with lemon wedges to squeeze on fish.





I add a little more olive oil and sometimes butter to the salmon in the tinfoil because i like to drizzle it over some white rice and steamed brocolli!





The flavor of the salmon is excellent, so I don't like to add a whole lot to it. Just some simple fresh ingredients.

Salmon: Grilled in White Wine Marinade With Vegetables


Ingredients


4 salmon fillets


Marinade


salt and pepper


2 teaspoons dried dill


1 garlic clove, chopped


2-3 tablespoons lemon juice


2 tablespoons olive oil, or up to 1/4 cup olive oil


1/4-1/2 cup dry white wine (I used Chardonnay)

6 Tbs. butter, well softened at room temperature


2 Tbs. fresh lemon juice, warmed slightly


2 Tbs. minced fresh ginger


2 Tbs. snipped fresh chives


Olive oil for the pan


4 salmon fillets (5 oz. each), skinned if you like, patted dry


Salt and freshly ground black pepper

In a bowl, blend the butter, lemon juice, ginger, and chives well. Set aside at room temperature.











Heat the oven to 500掳F. Set a large ovenproof skillet over medium-high heat and add just enough oil to make a light film. Sprinkle the salmon lightly with salt and pepper. When the oil is very hot, add the salmon, skin side up, and cook until nicely browned, about 1 min. Flip the fish over and put the skillet in the oven. Roast for 2 min. for medium rare; 4 min. for medium well. Check for doneness with the tip of a knife. Remove the pan from the oven, transfer the fish to serving plates, and immediately top the salmon with a dab of the lemon-ginger butter.
Baked Salmon --








.INGREDIENTS


2 cloves garlic, minced


6 tablespoons light olive oil


1 teaspoon dried basil


1 teaspoon salt


1 teaspoon ground black pepper


1 tablespoon lemon juice


1 tablespoon fresh parsley, chopped


2 (6 ounce) fillets salmon











..DIRECTIONS


1.In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a medium glass baking dish, and cover with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally.





2.Preheat oven to 375 degrees F (190 degrees C).





3.Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

Alaska Salmon Bake with Pecan Crunch Coating --








.INGREDIENTS


3 tablespoons Dijon mustard


3 tablespoons butter, melted


5 teaspoons honey


1/2 cup fresh bread crumbs


1/2 cup finely chopped pecans


3 teaspoons chopped fresh parsley


6 (4 ounce) fillets salmon


salt and pepper to taste


6 lemon wedges








..DIRECTIONS


1.Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and parsley.





2.Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture.





3.Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Serve garnished with lemon wedges.

Asian Salmon --








.INGREDIENTS


2 pounds salmon filets, with skin


2 tablespoons olive oil


2 tablespoons rice vinegar


2 tablespoons soy sauce


1 tablespoon packed brown sugar


2 cloves garlic, minced


1 pinch ground black pepper


2 tablespoons minced onion


1 tablespoon sesame oil


2 cups long-grain white rice


1 teaspoon dried dill weed


4 cups water








..DIRECTIONS


1.Make several shallow slashes in the skinless side of the salmon filets. Place filets skin-side down in a glass baking dish. In a medium bowl, whisk together the olive oil, rice vinegar, soy sauce, brown sugar, garlic, pepper, onion and sesame oil. Pour the liquid over the salmon, cover and refrigerate for 1 to 2 hours.





2.Preheat the oven to 350 degrees F (175 degrees C). In a medium saucepan combine the rice, water and dill weed. Bring to a boil, then cook over medium low heat until rice is tender and water has been absorbed, about 20 minutes.





3.Remove cover from salmon, and bake in the marinating dish for about 30 minutes, or until fish can be flaked with a fork. Serve salmon over the rice, and pour sauce over.

Blackened Salmon Fillets --








.INGREDIENTS


2 tablespoons ground paprika


1 tablespoon ground cayenne pepper


1 tablespoon onion powder


2 teaspoons salt


1/2 teaspoon ground white pepper


1/2 teaspoon ground black pepper


1/4 teaspoon dried thyme


1/4 teaspoon dried basil


1/4 teaspoon dried oregano


4 salmon fillets, skin and bones removed


1/2 cup unsalted butter, melted

1.In a small bowl, mix paprika, cayenne pepper, onion powder, salt, white pepper, black pepper, thyme, basil and oregano.





2.Brush salmon fillets on both sides with 1/4 cup butter, and sprinkle evenly with the cayenne pepper mixture. Drizzle one side of each fillet with 1/2 remaining butter.





3.In a large, heavy skillet over high heat, cook salmon, butter side down, until blackened, 2 to 5 minutes. Turn fillets, drizzle with remaining butter, and continue cooking until blackened and fish is easily flaked with a fork.
