Recipe for Piccadilly's Salmon Patties?

Does anyone have a recipe (or at least a really close copy) for the Salmon Patties served at Piccadilly?Recipe for Piccadilly's Salmon Patties?
I don't know Piccadilly's (Presume it is in the UK) but here is how we do it in Washington State in the western United States where we have tons of wild salmon and catch our own on a regular basis year round.





Use about 2 cups canned or leftover cooked salmon (inspect the cooked salmon for bones. No need to inspect canned as the bones will have calcified and you can eat them as a added source of calcium and are not sharp)





3/4 cup Japanese Panko crumbs (May use Saltine style crackers pulverized into a fine meal in place of the panko crumbs)


1/4 cup finely minced onion


1/4 teaspoon garlic powder


1/8 cup chopped scallions (green onion)


1 egg beaten


Kosher salt to taste


Fresh ground black pepper to taste


Fresh ground pink peppercorns to taste (optional)


1/8 cup milk





Mix these ingredients together. Hand form into patties about 4 inches in diameter and about 1 inch thick. Fry in butter on Medium heat until GBandD (Golden Brown and Delicious-Thanks for this one Alton Brown!).





Serve with homemade salmon sauce recipe follows:





1/2 cup Mayonnaise


2 Tablespoons Yellow mustard


1/2 teaspoon Garlic Powder


and Onion Powder each.


Fresh ground black pepper to taste


1/3 cup Ketchup


Dash of tabaco hot pepper sauce


1 teaspoon of Woresteshire sauce


1/2 teaspoon of white sugar.





Mix together. Experiment with the porportions. This should have the look of Thousand Island salad dressing but with a spicy kick and no pickle pieces. This is my recipe that I believe enhances the taste of any piece of salmon it touches. Enjoy.
