I'm looking at recipes at allrecipe.com but can't decide on one, can you help me?!?

Ingredients





* 4 salmon steaks 1-inch thick


* 1 teaspoon whole cumin seed


* 1 teaspoon whole coriander seed


* 1/2 teaspoon whole fennel seed


* 1 teaspoon dry green peppercorns


* Sea salt or kosher salt


* Canola or olive oil to coat steaks





Directions





Prepare grill by lighting 4 quarts of charcoal (1 starter chimney's worth), or turning gas grill to medium-high.





Examine steaks for pin bones by rubbing fingers over surface of meat. If found, remove with bone tweezers or pliers reserved for culinary uses.





Using a sharp paring or boning knife, trim bones from the cavity side of the steak. Trim the stomach flaps so that 1 side is missing about 2 inches of skin and the other, 1 inch of meat. Roll the skinless section up into the hollow of the cavity, then wrap the other around the outside to form a round resembling a filet mignon. Tie in place with 2 passes of butcher's twine. (Do not tie it too tight or fish will pop out during cooking.)





Combine cumin, coriander, fennel and peppercorns on a double thick piece of aluminum foil and toast over grill, shaking gently until seeds become fragrant. Crush seeds in mortar and pestle or pour into spare pepper grinder. Coat steaks lightly with oil, season with salt, then liberally grind toasted seeds on both sides of steaks.





Quickly wipe hot grill grate with a rag or towel dipped in a little Canola oil, then grill fish to medium rare, about 3 minutes per side. (Fish should be well colored on the outside and barely translucent at the center.





Serve steaks alongside simple salad dressed with ';Veni, Vedi, Vinaigrette.';

Ingredients





* 1 pound butter


* 3 to 4 tablespoons extra virgin olive oil


* 2 tablespoons fresh chives, chopped


* 1 tablespoon thyme, chopped


* 1 tablespoon sage, chopped


* 1 tablespoon rosemary, chopped





Hardware:





* Dough scraper


* Standing mixer


* Parchment paper or plastic wrap





Directions





Chop the butter into uniform chunks using the dough scraper.





Place the oil into the food processor and add the chives. Process until the chives are finely chopped. Add the remaining herbs and blend until the herbs have colored the oil. Using the whisk attachment, whip the butter in the mixer?s work bowl at medium speed until it softens and lightens in color, about 5 to 7 minutes.





Add the herb oil to the butter and beat for another 2 minutes until oil is fully incorporated. Remove butter from bowl and spoon onto parchment paper or plastic wrap. Roll into a log, using the edge of a baking sheet to form a tight log. Chill for 2 hours before serving.

';Corny Mango Salmon';





Need: Fresh, skin-on one side salmon, cornmeal, diced mango, mango juice/puree, herbs/spices that you like; olive oil; butter





Instructions: Combine part of the diced mango and all of the mango juice/puree in a medium saucepot (can add brown sugar and nutmeg if you like). Cook until combined into a slightly chunky chutney.





Take part of the mango chutney you made (cooled) and dredge seasoned salmon in it, then in the seasoned cornmeal. Skillet fry in a skillet with olive oil and butter, skin side down first, until browned, then finish cooking in a 375掳 oven until salmon flakes easily with fork.





To serve, plate Corny Mango Salmon, then pour some of the chutney (still slightly warm) on top.

INGREDIENTS:


3 tablespoons Dijon mustard


3 tablespoons butter, melted


5 teaspoons honey


1/2 cup fresh bread crumbs


1/2 cup finely chopped pecans


3 teaspoons chopped fresh parsley


6 (4 ounce) fillets salmon


salt and pepper to taste


6 lemon wedges





DIRECTIONS


1. Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and parsley.





2. Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture.





3. Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Serve garnished with lemon wedges
I sear roast my salmon, very easy %26amp; yummy!





Preheat oven to 375 degrees





Season salmon on both sides with salt %26amp; pepper.





In an oven safe frying pan, heat 2 tablespoons of olive oil over medium high heat. Sear salmon on one side, undisturbed, for 2 minutes. Flip salmon, %26amp; sear for 1 minute on the other side.





Remove from heat %26amp; place pan in oven for 3 minutes for medium, 4 minutes for well done.





I serve with tzaziki or BBQ sauce or over steamed spinach
As Salmon has a unique flavor, I don't ever bother with fancy receipe's to prepare it. Salmon being a oily fish, is best done on the grill, first dry the filets with a paper towel, then put salt and pepper, brush with olive oil. Cook on grill, when done, put on plate, and pour on olive oil and juice of lemon.
For fresh salmon, I like to take the steaks and put grated fresh ginger, grated onion, salt, pepper, lemon juice , olive oil and cilantro on them, and bake them in the oven until they done. Not fancy, but tastes good.

You could place Italian Dressing on it ,It may sound disgusting but its really good!
Fresh Salmon? Sushi.





Grocery Store? Breaded. Deep Fried.





Smoked? Peppered.
I like them wrapped in foil with some salt, balck pepper and cumin, cooked in the oven and served with new potatoes and green beans!

This one -- and I found it on the allrecipes.com website. Some of the reviews said that it was too greasy, and it is a little greasy as written ... so I took the advice of others and reduced the mayo and subbed some yogurt in it's place.





I guess this recipe appeals to me because it reminds me of my childhood while my dad was stationed in Belgium. But, if you don't like mustard, you won't like this dish.





Salmon Fillets with Creamy Dill





3/4 cups mayonnaise


3/4 cups yogurt


陆 cup mustard


1 teaspoon fresh thyme, chopped


1 teaspoon dried oregano


1 teaspoon fresh basil, chopped


1 pound salmon fillets


2 teaspoons dried dill weed


Preheat oven to 375 degrees. Prepare baking sheet with non stick spray.





In a bowl stir together mayonnaise and mustard. Add thyme, oregano and basil, mixing well.





Place salmon fillets on baking sheet and spread with mayonnaise mixture. Sprinkle with dill weed.





Bake for 30 - 40 minutes, or until salmon easily flakes with a fork.
