My family loves salmon and these are 2 top favorite ways I make salmon:





SALMON PATTIES:





1 6 oz pouch of pink Salmon (no bones or need to drain this)


1/4 c finely chopped green onions


1/4 c mayonnaise


1 TBSP freshly squeezed lemon juice


1/2 tsp. garlic powder and dash black pepper


1/3 cup finely chopped red bell pepper


1 egg, beaten


1 c seasoned bread crumbs


3 TBSP butter


1/4 tsp. season salt





Combine first seven ingredients in bowl.Stir in Chicken of the Sea Salmon, egg and 1/3 cup breadcrumbs. Form mixture into 4 balls. Roll salmon balls in remaining breadcrumbs; flatten into cakes about 1/2 inch thick. In skillet, melt butter over medium heat. Fry 3 to 4 minutes or until golden brown.

BAKED SALMON FILLETS





I spread a thin layer of mayonnaise, then sprinkle with dill, paprika, garlic powder, black pepper, and season salt. Then bake at 400 for about 10-15 minutes until salmon flakes easily with a fork.

Alaska Salmon Bake with Pecan Crunch Coating





3 tablespoons Dijon mustard


3 tablespoons butter, melted


5 teaspoons honey


1/2 cup fresh bread crumbs


1/2 cup finely chopped pecans


3 teaspoons chopped fresh parsley


6 (4 ounce) fillets salmon


salt and pepper to taste


6 lemon wedges





DIRECTIONS


Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and parsley.


Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture.


Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Serve garnished with lemon wedges.
SERVES 4 ACTIVE TIME: 20 min TOTAL TIME: 20 min





4 salmon fillets (6 oz each)


Pan Searing Flour


4 tsp Pure Olive Oil


4 Tbsp Butter


4 Tbsp chopped Peeled Shallots


4 tsp fresh thyme, chopped








Dust salmon with pan-searing flour; pat off excess.





Heat oil in skillet on MEDIUM-HIGH, until oil faintly smokes; add salmon.





Turn over when salmon changes color one-quarer of the way up and seared side has turned paper-bag brown, 1-2 min.





Reduce heat to MEDIUM. Cook 3-4 min until internal temp of reaches 130 degrees; check by inserting thermometer into thickest part of salmon.





Add butter, shallots and thyme to pan. Melt and blend, but do not burn the butter. Baste salmon with spoon, 1-3 min,until internal temp reaches 130 degrees. Transfer to clean platter; let rest at least 2 min.
