Does anyone have a good recipe for a dill sauce to go with salmon?

I've done this one for about 25 years (learned it from the chef at Mr. Stox restaurant in CA); and it also works well as a dip for vegetables:





Equal proportions (i.e. 1/2 cup EACH) Dijon mustard and mayonnaise; mixed with 2-3 heaping TB dried dillweed .....So easy, but so good:)Does anyone have a good recipe for a dill sauce to go with salmon?

MUSTARD DILL SAUCE





4 Tb Dijon mustard


1 ts dry mustard


3 Tb sugar


2 Tb white wine vinegar


1/3 cup olive oil


3 Tb minced dill





Mix mustard, sugar and vinegar to a paste. Beat in oil slowly. Thicken to a mayonnaise consistency. Stir in dill.

DILL SAUCE





4 tbsp. fresh dill, finely chopped


1 tbsp. parsley, chopped


1 c. basic white sauce





Combine dill and parsley with white sauce. Cook on very low heat for about 5 minutes.





OR





DILL SAUCE





2 tbsp. sour cream


1/2 tsp. dry mustard


1/2 tsp. dill weed


1/4 tsp. lemon juice





In cup, combine sour cream, mustard, dill and lemon juice. Mix well. Serve over salmon.





OR





DILL TARTAR SAUCE





1 c. mayonnaise


1/2 c. well drained pickle relish or chopped dill pickles


2 green onions, thinly sliced (use part of green tops)


1 tsp. dill weed


1/4 tsp. celery seed


1/2 tsp. Worcestershire sauce


2 tbsp. lemon juice





Combine all ingredients and refrigerate several hours. Makes about 1 2/3 cups





OR





DILL SAUCE FOR FISH





1 c. mayonnaise


1/2 c. well drained pickle relish or chopped dill pickles


2 green onions, thin sliced (include part of green tops)


1 tsp. dill weed


1/4 tsp. celery seed


1/2 tsp. Worcestershire sauce


2 tbsp. lemon juice





Combine all ingredients and refrigerate several hours to allow flavors to blend. Makes about 1 2/3 cups.





OR





CELERY DILL SAUCE





4 tbsp. butter


1 1/2 c. diced onion


4 c. diced celery


2 tbsp. minced fresh dill or 2 tsp. dried


1 c. water


1/2 c. dry white wine


1/2 c. sour cream


Salt and pepper





In large saute pan, melt butter and saute onion, celery and dill for 3 to 5 minutes until onion is limp.


Add water and wine. Simmer until vegetables are tender 5 to 10 minutes. Transfer the sauce to a processor or blender and blend until smooth. Reheat the sauce and add the sour cream season to taste with salt and pepper. Serve immediately over chicken or fish.





OR





LEMON DILL SAUCE





3 tbsp. mayonnaise


2 tbsp. Dijon mustard


2 tbsp. lemon juice


2 tsp. snipped fresh dill weed or 1/2 tsp. dried dill





Mix mayonnaise, mustard, lemon juice, and dill in a jar. Refrigerate





OR





SWEET MUSTARD - DILL SAUCE





3 tbsp. brown sugar


1 tbsp. dry mustard


1 tbsp. brown mustard


3 tbsp. white vinegar


1 minced garlic clove


1/2 c. olive oil


2 tbsp. fresh dill





Combine sugar, mustard, white vinegar and garlic. Allow to steep 10-20 minutes in blender. Turn blender on whip and add oil drop by drop. Pour out and mix in the dill. Chill and use as a marinade for salmon or a dressing on lox or cooked fish

! cup of lemon juice ,Dill ,1 tsp of sugar ,cook on stove until almost a boil turn on low heat and add 1/2 cup of water with 1Tsp of Cornstarch mixed together until dissolved and add that to your lem ,dill mixture until thick, pour on Salmon! Hope this helps you out!
