Anyone out there have a good recipe or two for using leftover cooked salmon?

Salmon patties. Made just like crab cakes but use salmon.Anyone out there have a good recipe or two for using leftover cooked salmon?
For a meal that only takes five minutes to prepare, stuff salmon inside of half of an avocado. I simply take a can of wild Alaskan salmon, (king salmon) no salt added and mix it with a teaspoon of grape seed oil mayonnaise, a few pieces of chopped celery and chopped red onion and another teaspoon of extra virgin olive oil. I mash it with a fork to a salad consistency and spoon it into each half of an avocado cut in half. Put on a plate and eat with a teaspoon. Tastes great and is filling. I eat this for breakfast to cut down on huge insulin levels rising as I go on my morning walk. You can serve with Ryvita crackers that have very little salt and no fat...just rye flour and water.

Make a salmon salad, like you would do with tuna.
Serve the fish with a simple sauce made with chopped herbs, such as chopped chervil and dill mixed with a little melted butter and lemon juice.





Serve the fish on a bed of broiled (grilled) halved tomatoes, brushed with a little olive oil, and a few sliced olives.

Bake it under a broiler for a few minutes until cheese is brownish and bubbly!!
I like the following sauce over my salmon.





1 can coconut milk


1 T red curry paste


1 T fish sauce


1 T soy sauce





Cook until bubbly and serve over salmon. Serve with steamed rice
Salmon Chowder


2 C diced peeled potatoes


1 1/2 C fresh or frozen mixed vegetables


1 large onion, chopped


1/2 ts celery seed


2 C water


6 plum tomaotes, peeled, seeded %26amp; chopped


3 TB butter


3 TB all purpose flour


1/4 ts salt


dash pepper


2 C milk


2 C cubed cooked salmon





in a dutch oven or soup kettle, combine the vegetables, except the tomatoes, celery seed and water. Bring to a boil. Simmer 20 minutes. Add the tomtaotes and simmer 5 minutes longer. In a sauce pan, melt butter and stir the flour, salt %26amp; pepper together till smooth. gradually add milk %26amp; bring to a boil and cook %26amp; stir for 2 minutes or until thick. Add to the vegetable mixture and stir in the salmon and heat through.





Salmon pasta primevera


8oz uncooked fetuccini, broken in half


1 1/2 C broccoli


1/4 C chopped red onion


2 TB chopped green pepper


2 garlic cloves, minced.


4 TB butter, divided


1 envelop alfredo sauce mix


1/2 C evaporated milk


1/2 C water


salt %26amp; pepper to taste


1 C cubed cooked salmon


crumbled cooked bacon, optional





Cook fettuccine according to package directions. Meanwhile, sautee broccoli, onion, green pepper and garlic in 2 TB butter until tender. In a large saucepan, combine the sauce mix, milk, water , S%26amp;P and remaining butter. Cook over medium heat until thickened. Add the salmon %26amp; heat through. Drain pasta; add to vegetable mixture. Top with sauce %26amp; gently toss to coat. Sprinkle with bacon if desired





Fish Patties


1 to 2 cans fish of your choice or you can blend salmon/mackeral/tuna


1 egg


1 to 2 tsp. french's mustard


1 onion chopped fine


1 tsp salt


1 tsp pepper


1/2 cup either oats or crushed saltines


mix all together, and mix in enough flour to hold mixture together.


fry in hot oil until golden brown





Use them as patties along with tartar sauce


they are good hot or cold

1 can of cannellini beans ; any white beans work (rinsed %26amp; drained)


1/2 C up to 1 cup extra virgin olive oil


2-6 cloves garlic (depending on your taste)


juice from 1/2 - 1 lemon (depending on your taste)


salt %26amp; pepper (to taste)





Blend until smooth in a food processor or blender.





You can also add fresh flat-leaf (italian) parsley, if you like.





Use this mixture as a spread on sandwiches or with raw veggies.





flake some salmon into the bean mixture %26amp; stir well. Add chopped red onion %26amp; celery, if you like.
