Salmon Croquette's good recipe?

I wanted to know a if anyone had a good recipe for this food dish. And also I've made it before and for some reason it wouldn't stick together. The recipe said to use cornmeal,but it didn't work and wanted to know if anyone had suggestions?Salmon Croquette's good recipe?
Man, don't you use no cornmeal! Just the salmon, flavored bread crumbs and eggs.Salmon Croquette's good recipe?
SALMON CROQUETTES


(makes 6)


2 wild salmon fillets (or a 15 oz. can)


2-3 tbsp baby dill, chopped


2 tsp lite mayo


1/2 tsp Dijon mustard (optional)


1 egg white


2-3 tbsp dry bread crumbs plus more for dredging


salt and pepper to taste


olive oil or cooking spray for frying





If you are using fillets, heat a pan and coat with spray. Place salmon skin side down and turn the heat to medium high. When you see the skin begin to peel remove pan from heat. Let cool and peel skin off.





Place salmon in a large bowl and mash with a fork. Add remaining ingredients and season to taste. Shape into patties, cover with film and refrigerate for 30 minutes.





Heat a skillet and coat with oil or spray. Dredge patties in crumbs lightly and place on pan. Cook on each side until golden brown.
EASY SALMON CROQUETTES





1 sm. can salmon


1 med. potato


1/2 sm. onion, grated


1 egg, beaten


Salt and pepper to taste


4 or 5 saltines, crumbled





Cook potato and mash with tablespoon butter. Add other ingredients and mix. Shape into croquettes and roll in some more cracker crumbs. Fry in oil in skillet or deep fryer until brown.
I use 1 can of pink salmon, 1 c crushed cracker crumbs and 1 egg. Mix all together. Make patties and fry in moderately hot oil. I can tastes them now.
Try poulenta instead of cornmeal !
