here is a recipe that I recieved from our charter boat captain and it is excellent! and very different from the 'norm'





2 large fillets/skin removed





2 medium onions/sliced





2 cups Bulls Eye barbecue sauce





8 slices bacon





1/2 cup water





2 tsp. butter





1 green pepper/diced (optional)





1/2 cup fresh mushrooms (optional)











Place fish on large piece of double aluminum foil. Salt and pepper fish to taste. Place 2 strips of bacon on each side of fillet. Add sliced onions, butter, and barbecue sauce (thinned with water). Add green pepper and mushrooms if desired. Cover with piece of double aluminum foil and wrap tightly. Place foil package on hot cooking grill, 15 to 20 minutes on each side. Serve with baked potato or wild rice and warm garlic bread.

I've got a damn good salmon recipe you should like. It takes some overnight prep time, and it's not what most people would call 'simple', but a lot of the best stuff isn't.





Marinated Wild Salmon





INGREDIENTS


4 salmon fillets


salt and pepper to taste


1 tablespoon onion powder


1 teaspoon crushed red pepper flakes


1/4 cup olive oil


1/4 cup fresh lemon juice


4 cloves garlic, minced


3 tablespoons white balsamic vinegar


2 tablespoons white sugar


2 tablespoons chopped green onions


2 tablespoons chopped cilantro





DIRECTIONS


1) Season fillets with salt and pepper, onion powder, and red pepper flakes. Set aside in a baking dish.





2) In a medium bowl, mix together olive oil, lemon juice, garlic, balsamic vinegar, sugar, green onions, and cilantro.





3) Pour marinade over salmon; cover, and refrigerate overnight, or at least 6 hours.





4) Preheat oven to 450 degrees





5) Arrange salmon on a broiling sheet. Place in the preheated oven, and bake for 5 minutes. Increase heat to 500 degrees, turn fillets, and broil 5 minutes more. Serves 4.

Salmon Loaf





Original recipe yield:


1 loaf

COOK TIME 45 Min


READY IN 50 Min





INGREDIENTS





* 1 (14.75 ounce) can salmon, undrained


* 1/2 cup crushed saltine crackers


* 1/2 cup milk


* 1 egg, beaten


* salt and pepper to taste


* 2 tablespoons melted butter





DIRECTIONS





1. Preheat oven to 350 degrees F (175 degrees C).


2. In a mixing bowl, combine the salmon, cracker crumbs, milk, egg, salt, pepper, and melted butter. Mix thoroughly.


3. Press the salmon mixture into a lightly greased 9x5 inch loaf pan.


4. Bake in a preheated oven for 45 minutes or until done.
I love grilled salmon. I usually use a citrus-basil rub (my personal favorite is Pampered Chef brand). I sprinkle the rub on a boneless, skinless salmon filet and grill it over med heat in a fish basket made for grilling fish. Super simple and very tasty. Or Lowry's has a citrus marinade that is also very good on salmon for the grill. I pair it with steamed fresh broccoli and black bean mixture, and sprinkle that with fresh parmesan cheese.
