Creamy Smoked Salmon Pasta:
INGREDIENTS (Nutrition)
6 tablespoons butter
1/2 onion, finely chopped
2 tablespoons all-purpose flour
2 teaspoons garlic powder
2 cups skim milk
1/2 cup grated Romano cheese
1 cup frozen green peas, thawed and drained
1/2 cup canned mushrooms, drained
10 ounces smoked salmon, chopped
1 (16 ounce) package penne pasta
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Melt butter in a large skillet over medium heat. Saute onion in butter until tender.
Stir flour and garlic powder into the butter and onions. Gradually stir in milk. Heat to just below boiling point, and then gradually stir in cheese until the sauce is smooth. Stir in peas and mushrooms., and cook over low heat for 4 minutes.
Toss in smoked salmon, and cook for 2 more minutes. Serve over pasta.

here are 2 of our favorite recipes i came across.... depends if i'm cooking indoors or on the grill......
Glazed Salmon
INGREDIENTS....
6 (5 ounce) salmon fillets
4 cloves garlic, minced
1 tablespoon white wine
1 tablespoon honey
1/3 cup balsamic vinegar
4 teaspoons Dijon mustard
salt and pepper to taste
1 tablespoon chopped fresh oregano
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil, and spray with non-stick cooking spray.
Coat a small saucepan with non-stick cooking spray. Over medium heat, cook and stir garlic until soft, about 3 minutes. Mix in white wine, honey, balsamic vinegar, mustard, and salt and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened.
Arrange salmon fillets on foil-lined baking sheet. Brush fillets with balsamic glaze, and sprinkle with oregano.
Bake in preheated oven for 10 to 14 minutes, or until flesh flakes easily with a fork. Brush fillets with remaining glaze, and season with salt and pepper. Use a spatula to transfer fillets to serving platter, leaving the skin behind on the foil.
Grilled Salmon
INGREDIENTS.....
1 1/2 pounds salmon fillets
lemon pepper to taste
garlic powder to taste
salt to taste
1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup water
1/4 cup vegetable oil
DIRECTIONS
Season salmon fillets with lemon pepper, garlic powder, and salt.
In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.
Preheat grill for medium heat.
Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.

Salmon and pasta bake
Ingredients

1 clove garlic, crushed
30g/1 oz butter
120 ml/4 fl oz double cream
110g/4oz piece of salmon
55g/2oz spinach
200g/7oz cooked tagliatelle
2 eggs
Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Gently soften the onion and garlic in the butter for 5-6 minutes. Add the cream and heat through.
3. Poach the salmon in boiling water for 2-3 minutes and drain.
4. Break the salmon into large chunks and add to the sauce. Stir in the spinach and cook for one minute.
5. Add the pasta and stir through.
6. Lightly beat the two eggs and stir in.
7. Put the mixture into an ovenproof dish and bake in the oven for 12-14 minutes.
This recipe comes from an asian cookbook, which I dont have anymore.
It is the yummiest salmon ive ever eaten, quite sweet and it will melt in your mouth. Everyone that i cook this for loves it.
I will try and explain it to you off the top of my head.
Salmon fillets skinned and boned, cut up into thick strips
4 tablespoons of asian cooking rice wine
3 tablespoons of soya sauce
a table spoon of brown sugar.
3 garlic cloves crushed
a desert spoon of crushed ginger.
squeeze the garlic and ginger in your hands so the juices run into a bowel
in a saucepan add the wine and soy sauce, garlic and ginger juices, when just started bubbling add the brown sugar, then stir till sauce becomes a little bit thicker. Take off the stove and leave to cool.
When cooled pour over the salmon and leave to marinate in the fridge for about an hour.
Then skewer the salmon to make like a kebab and bake in the oven untill the salmon is cooked through.

I like to season my salmon with garlic pepper, kosher salt and a sprinkle of Italian seasoning. I pan sear 3 -4 minutes per side on medium-high heat with olive oil and butter. Remove from pan, tent with foil, turn heat to medium low and add a tablespoon of butter and saute some minced garlic, add the juice of 1/2 a lemon and drizzle over the salmon.
I don't like salmon but I cook it for my hubby and he loves what I do with it. I place the salmon fillet on a piece of aluminum foil I sprinkle it with ';Spike'; seasoning and some cayenne pepper, wrap up, and bake at 350 for 7-10 minutes, depending on size of fillet.
Spike is great stuff, I have used it on fish, chicken, pork, and veggies and always get rave reviews.

4 thick salmon steaks or fillets
Mayonnaise
Piquillo peppers
Strips Serrano ham
Cover a baking tray with foil, lightly oil and arrange the salmon on the tray.Place three or four peppers on top of each piece of fish, top with mayonnaise and thin slices of Serrano ham.
Bake in a moderate oven for 20 - 25 minutes until the salmon is cooked through.
Serve with tomato salad.
