Can someone give me the recipe for salmon croquettes?

15-ounce can red salmon, drained

1 small onion, finely chopped

1 egg, lightly beaten

1/4 teaspoon ground black pepper

18 to 20 saltine crackers, crushed (or about 2/3 cup cracker meal)

1/2 cup canola oil

Mash the drained salmon in a bowl. Add the chopped onion, egg and black pepper. Mix gently. Shape into six croquettes (patties).

Crush the saltines between two sheets of waxed paper with a rolling pin. Set each croquette into the crumbs, pressing gently to make sure crumbs adhere, turning to coat both sides.

Heat oil in skillet over medium heat. Fry croquettes on one side until golden brown, then gently turn and fry other side. Serves 4 to 6, depending upon appetites.

Note: Persons wishing to avoid eggs can substitute Egg Beaters or other egg substitute with good results in this recipe. Since the purpose of the egg is more to bind the mixture together than anything else, one egg white, if the egg is big enough, will serve this purpose. Can someone give me the recipe for salmon croquettes?

turn over to coat the other side and gently drop into hot oil. Press the pappy down a bit. They should be about 1/4 think. Fry in medium hot oil for about 2 minutes on each side or until golden brown.
Here is my mom's recipe. I love t make them! Take one large can of salmon, and pt in a bowl. Take out all the bones. Add 2 eggs, 1/2 cup finely diced onion, and 3/4 cup finely crushed saltine crackers. Add salt and freshly ground pepper. If mixture is too dry, add a little milk. If too wet, add more crushed crackers. Heat oil in electric skillet. When hot, place croquettes (pat them together with your hands) in skillet. Fry until golden and crispy. Don't let your oil get too hot. They will burn easily. Drain on paper towels.I serve mine with homemade mashed potatoes and green beans are great side dishes for salmon croquettes. Hot biscuits go well too.
