Fresh Salmon Chowder Recipe

Ingredients
1 fresh salmon fillet, skinned and cut into small chunks
6 red potatoes, cubed
1 package of prosciutto
1 bag of frozen organic corn
3 garlic cloves, minced
1 bottle of clam juice
2 cups chicken broth ( imagine)
1/2 cup half and half
1 cup of white sharp cheddar if you like. I made two versions tonight to show you, one without the cheese and one with, I prefer without.
If you don't add the cheese you don't really need much half and half just enough to add a milky color.
Directions
In large saucepan place chopped prosciutto, minced garlic and some dill along with some olive oil and cook for about 3 minutes stirring a bit.
Add your potatoes, clam juice, 2 cups of broth and bring to a boil. Cook until potatoes are tender about 6 minutes. When potatoes are tender add your frozen corn, half and half and your chunks of salmon. Reduce heat to a simmer and cook for about 5 more minutes shutting off heat until ready to serve.
I served with roasted garlic and stone ground bread.

Slice them up into inch thick steaks and pan-fry (or grill ) them with a bit of oil till it browns on both sides.
Remove and set aside. Chop or slice some garlic %26amp; fry them in a little more oil until they turn slightly brown %26amp; crispy.
Pour some oyster sauce over the salmon steaks %26amp; add some of the crispy garlic slivers and voila!! Serve with warm white rice and enjoy!! :)

Simple Baked Salmon
2 salmon filets (approx. 1/2 lb each)
olive oil
tartar sauce
A quick and easy dish that requires very little effort. It works best with fresh salmon purchased the same day you plan to eat it.
Put salmon filets in a glass baking dish. Drizzle a little olive oil over the filets and flip them over a couple of times to spread the oil and get a little oil on the bottom of the baking dish and the under side of the filets.
Bake in a 350 degree oven for 15-30 minutes depending on the thickness of the filets. You want them to be cooked until they start to flake and become opaque inside, but don't dry them out.
Serve with tartar sauce and carrot salad.
Slice it very thinly and sprinkle with fresh lime juice.
Or make a fire in the garden and roast it in some foil.
Or you could boil it in a saucepan on the hob. If you don't have a hob, but you have an electric kettle, cut the salmon into small cubes and pour boiling water onto them.
