1 can (16 ounces) salmon
1 small onion, finely grated
2 tablespoons minced fresh parsley
ground black pepper, to taste
2 large eggs, well beaten
1 to 1 1/2 cups fine dry bread crumbs
3 tablespoons butter
Preparation:
Turn salmon and liquid into a medium mixing bowl. Flake with a fork, removing OR mashing any bones (they are edible). Mix in grated onion, parsley and pepper. Mix beaten eggs with salmon. Add enough bread crumbs, about 1/2 to 3/4 cup, to make thick enough to shape into 12 small patties. Roll patties in 1/2 cup bread crumbs. In a large heavy skillet over low heat, melt 2 tablespoons of butter; add patties. Fry patties slowly on one side; add remaining butter, turn patties and fry until brown on the other side.

2 8 oz. packages cream cheese, softened
1 small can salmon, 1/2 onion, finely minced
1 tbsp minced garlic, or 1 tsp garlic powder
2 tsp parsley flakes
1 package wonton or egg roll wrappers
oil for frying
Combine first 5 ingredients in a large mixing bowl; stir or beat until well-blended. Feel free to lick the beaters; it's good right now!
You could stop here and use it as a dip. But if you want to make the whole thing: heat oil to 350-375 degrees.
Take a wrapper (if you're using egg roll wrappers, cut them into quarters first) and place a small amount of filling into the center. Fold over into a triangle, and seal the edges with a little dab of water on a fingertip.
You can actually make the whole batch before frying if you like. When you have enough, drop them into the oil (5 or 6 at a time). When they float, use a fork to flip them, and then take them out after another 30 secs. or so.
Drain on paper towels. They will brown more as they drain. Serve immediately, if possible, or keep warm and crisp in a 250-degree oven. Good just plain, or with hot mustard or sweet-and-sour sauce.Anyone have a great recipe for canned salmon?
Salmon Patties or croquettes. I use salmon in the tuna helper boxes instead of tuna it's better for you!
Salmon Patties
1 (8 ounce) can salmon
2 tablespoons bell peppers
1/2 cup celery
1 teaspoon Old Bay Seasoning
1/2 teaspoon white pepper
2 eggs
6 Nabisco Triscuits
1/2 cup vegetable oil
Directions
Pour oil in a teflon coated skillet and heat to 200 degrees.
Drain salmon.
Grind Triscuits in food processor, place on a plate for breading patties.
Add rest of ingredients to food processor with steel blade.
Pulse for 15 seconds.
Refridgerate ingredients for 30 minutes.
With a large serving spoon, gently scoop out a portion of
the salmon mixture.
Gently roll in breading.
Gently place in oil.
Continue adding portions into the oil.
Saute until brown and patties are firm- about 5 minutes.
Smaller portions can be made for appetizers.
Serve with tartar sauce or favorite sauce that is low carb such as fresh dill mixed with sour cream.
try just making like tuna fish salsd take out any bones or skinn thats what i do or make fish cake make balls then roll in bread crums. and fry or bake...simple steve said so....
put some philadelphia cheese on it then add home made breadcrumbs cook in the oven for 20 mins and add mustard and cress when cooked serve with new potatoes and your choice of veggies.
