Okay so the canned salmon is a lot cheaper than the fresh salmon, but it's not as good tasting because it's already cooked in the can for preservation's sake.
I have a lot of canned wild sockeye salmon because I always buy it when it's on sale... but I don't always feel like eating it. The only thing it seems to be good for is salmon salad (like tuna salad) and sandwiches. I want to make a meal with it, but I want it to taste good? How do I do that? Anyone have any good recipes with canned salmon?
P.S. If the recipe asks for fresh salmon it just isn't going to be the same. The recipe probably relies on the salmon being fresh for it to taste good. So no fresh salmon recipes please.Good recipes using canned salmon?
Usually when i buy a big load of canned salmon i make salmon patties!
You will need:
1 (14.75 ounce) can canned salmon
1 egg
1/2 cup self-rising flour
1 quart vegetable oil for frying
Directions:
In a medium bowl, combine salmon, egg, and flour; mix well. Form into patties.
Heat approximately 1/4 inch oil in a fry pan over medium-high heat. Fry patties in batches until browned, turning once. Drain on paper towels, and serve.
If you don't want to eat them plain just put them in a bun and eat them like a burger with ketchup, mustard, ect.
You can also make salad, try this recipe:
1 (8 ounce) package farfalle pasta
2 heads broccoli, separated into florets
2 carrots, peeled and chopped
1 cup olive oil
2 teaspoons soy sauce
3 tablespoons red wine vinegar
2 cloves garlic, pressed
3 tablespoons fresh lemon juice
salt and pepper to taste
10 ounces canned salmon, drained
Bring a large pot of lightly salted water to a boil. Add pasta and cook until al dente, 8 to 10 minutes; drain.
Bring a separate large pot of water to a boil. Add the broccoli and carrots, and cook in the boiling water until tender, 2 to 3 minutes; drain.
Combine the olive oil, soy sauce, red wine vinegar, garlic, lemon juice, salt, and pepper in a sealable container; seal. Shake vigorously to make the dressing.
Toss together the drained pasta, drained vegetables, salmon, and dressing in a large bowl. Store in refrigerator up to 4 days

i don't have a recipe, but my mom always made salmon cakes (or patties) from the canned salmon. They're kinda the same as crab cakes, probably around the same ingredients and the same texture.
You could probably use a crab cake recipe but just substitute the salmon for the crab. :)
SALMON PATTIES
1 (1 lb.) can salmon
1 egg
3/4 c. milk
3/4 c. cracker crumbs
1 tsp. chopped onions
1 tbsp. lemon juice
1 tbsp. flour
Mix together all ingredients. Use butter or shortening and brown in skillet on both sides. Makes 6 to 8 patties.
For Variety, add 1 Tbls Worcestershire Sauce, or 陆 tsp dill weed.
BAKED SALMON CASSEROLE - CANNED
1 can salmon, boned
1 1/2 c. rolled crackers, saltines
2 hard boiled eggs, chopped
Salt and pepper
2 tbsp. butter, melted
1 c. boiling water
Mix well and put in casserole: salmon, 1 cup crackers, eggs, salt and pepper. Mix 1/2 cup crackers with butter and spread over top. Pour over all water and bake at 350 degrees until brown.

CANNED SMOKED SALMON
Pack smoked salmon in jars leaving 1 inch head space. Add 1 tablespoon Wesson oil or olive oil. Screw lids on loosely. Put in oven so jars do not touch. Bake for 1 hour at 275 degrees. Take out and screw lids down tight and turn upside down to cool.

BAKED CANNED SALMON STEAK
Serves 4.
1 lb. can salmon
Dash of pepper
2 tbsp. lemon juice
3 thin slices Bermuda onion
1 tsp. Angostura bitters
1 c. sour cream
1/4 tsp. salt
Drain salmon but save the juice. Put the solid piece in a shallow casserole. Sprinkle with pepper and lemon juice. Lay onion slices on top and around. Mix remaining ingredients, add salmon juice, and pour on and around salmon. Bake at 325 degrees about 45 minutes, or until onion is tender. Baste 2 or 3 timers.
Serve with lemon wedges, fluffy mashed potatoes (or rice) and buttered green peas

* 1 Boboli庐 pizza crust
* 3 oz. pkg. cream cheese, softened
* 1/4 cup sour cream
* 7 oz. can salmon, drained, bones and skin removed
* 1 red bell pepper, chopped
* 4 green onions, chopped
* 1-1/2 cups shredded Monterey Jack cheese
* 1/2 tsp. dried dill weed
Preparation:
Preheat oven to 400 degrees F. Place crust on ungreased baking sheet. In small bowl, combine softened cream cheese and sour cream and mix until smooth. Spread over crust. Top with remaining ingredients, arranging evenly over pizza. Bake at 400 degrees F for 11-14 minutes or until cheese is melted and pizza is hot. Serves 4-6
Easy Salmon Cakes
3 teaspoons extra-virgin olive oil, divided
1 small onion, finely chopped
1 stalk celery, finely diced
2 tablespoons chopped fresh parsley
15 ounces canned salmon, drained, or 1 1/2 cups cooked salmon
1 large egg, lightly beaten
1 1/2 teaspoons Dijon mustard
1 3/4 cups fresh whole-wheat breadcrumbs (see Tip)
1/2 teaspoon freshly ground pepper
Creamy Dill Sauce (recipe follows)
1 lemon, cut into wedges
1. Preheat oven to 450掳F. Coat a baking sheet with cooking spray.
2. Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Add onion and celery; cook, stirring, until softened, about 3 minutes. Stir in parsley; remove from the heat.
3. Place salmon in a medium bowl. Flake apart with a fork; remove any bones and skin. Add egg and mustard; mix well. Add the onion mixture, breadcrumbs and pepper; mix well. Shape the mixture into 8 patties, about 2 1/2 inches wide.
4. Heat remaining 1 1/2 teaspoons oil in the pan over medium heat. Add 4 patties and cook until the undersides are golden, 2 to 3 minutes. Using a wide spatula, turn them over onto the prepared baking sheet. Repeat with the remaining patties.
5. Bake the salmon cakes until golden on top and heated through, 15 to 20 minutes. Meanwhile, prepare Creamy Dill Sauce. Serve salmon cakes with sauce and lemon wedges.
I use canned salmon to make salmon patties.

1 cup soft bread crumbs
1/2 cup Bisquick Heart Smart庐 mix
1 tablespoon Dijon mustard
1/4 teaspoon pepper
8 medium green onions, finely chopped
2 eggs, slightly beaten
1 (14.75 ounce) can red salmon
2 tablespoons margarine or butter
4 whole wheat burger buns, split
Lettuce leaves
4 tablespoons dill dip or Ranch dip
DIRECTIONS
In medium bowl, mix all ingredients except margarine, buns, lettuce and dill dip. Shape mixture into 4 patties, using heaping 1/2 cupfuls for each patty.
In 10-inch nonstick skillet, melt margarine over medium heat. Cook patties in margarine over medium heat 10 to 12 minutes, turning once, until brown and cooked through.
Fill buns with lettuce, salmon patties and dill dip.
