Ingredients:
2 salmon filets, skinned
Kosher salt and pepper to taste
1/2 onion, diced fine
1/4 cup clarified butter
1 cup champagne
1 Tbs. fresh dill, chopped
1 pint heavy cream
Salt and white pepper to taste
Preparation:
Saute 1/2 diced onion in 1/4 cup clarified butter until translucent. Add 1 cup champagne and reduce completely and add 1 tablespoons fresh chopped dill. While the champagne is reducing and cooking, put 1 pint heavy cream in a 3 quart pot and reduce by half. Combine onion mixture with cream and season with salt and white pepper to taste. Place on the grill and cook to your liking. To serve, place salmon filet on plate and top with champagne sauce.

A little more info would be helpful...where are you from, what tv station, a few more ingredients...Any food site will have poached salmon.
