A ';simple'; recipe for poached salmon is: Take salmon, put in a suitable pot, cover with water, cook at medium low heat, until done... BUT you say you like garlic,l etc. Now the recipe is no longer simple. I'm a retired professional gourmet chef. If you want a very tasty recipe for poached salmon, email me at

Take 2 or more chopped cloves of garlic, 1 sliced lemon, 1 slice of fresh ginger (or a pinch of dried ginger) and put it in a pan with the salmon. I like a little white wine for the poaching liquid. Salt to taste.

Garlic, lemon and ginger go very well together.

If you use wine, DON'T use cooking wine, DON'T use sweet wine. Use a medium dry wine that you would drink.

Oven-Poached Salmon in Garlic Broth:

The cabbage-and-carrot mixture adds a crispy contrast to this flavorful poached fish. The dish is best served in a large, shallow pasta bowl.

2 tablespoons lemon juice

5 garlic cloves, minced

2 (8-ounce) bottles clam juice

1 (16-ounce) bag coleslaw

4 (6-ounce) salmon fillets, skinned

1/4 cup chopped fresh cilantro or parsley

1/8 teaspoon pepper

Preheat oven to 375掳.

Combine first 3 ingredients in a small saucepan; bring to a boil. Reduce heat; simmer 5 minutes. Place coleslaw in an 11 x 7-inch baking dish; arrange fish on top of coleslaw. Pour juice mixture over fish; sprinkle with cilantro and pepper. Bake at 375掳 for 12 minutes or until fish flakes easily when tested with a fork.

Yield: 4 servings (serving size: 1 salmon fillet and about 1 cup slaw mixture)

This is not poached, but still super tasty. I think it was called ';Appleknocker Salmon'; by the genius man who came up with it. Don't remember his name, but I added garlic and pepper. My husband really likes it.

2 tablespoons extra virgin olive oil

3-4 tablespoons Basil freshly chopped or puree

1/2 tablespoon chopped fresh garlic

2 cups unsweetened apple sauce

2-3 salmon steaks

Pepper to taste

Warm the oil with basil and garlic and let flavors infuse. Then add apple sauce and salmon steaks. Pile sauce mixture on top of salmon. Cover it and cook at a simmer til fish done/firm. Serve it with steamed rice.

Enjoy!
