i want to make maybe a dill caper sauce, or something with tarragon.....i am going to put the salmon filet on the grill and need a sauce that will be easy to make and also taste yummy.. any suggestions???What is he best recipe for a sauce for a salmon filet?
Dill Sauce
1/4 c Mayonnaise
1 tbsp Dijon-style mustard
1 tbsp Chopped fresh dill or 1 tsp dried dill
Mix and let sit for 30 minutes.
Dill Butter
1 cup unsalted butter
1/2 cup finely chopped fresh dill
Freshly ground pink or black peppercorns
Melt butter in medium saucepan over medium-low heat. Add dill and ground peppercorns to taste. Stir, remove from heat and use immediately, or refrigerate or freeze for later use.
Cherry-Balsamic Sauce
1 cup fresh cherries, washed and pitted
1/2 cup fish or chicken stock
1/4 cup fresh thyme, stemmed
2 tablespoons brandy
1 teaspoon lemon juice
2 tablespoons brown sugar
11/2 teaspoons balsamic vinegar
Pulse cherries several times in food processor, until coarsely chopped. Simmer chopped cherries with stock, thyme, brandy and lemon juice in saucepan over medium heat 10 to 12 minutes, until reduced by half. Add brown sugar and vinegar, stir and simmer 2 to 3 minutes, until thoroughly heated. Remove from heat, but keep warm. Serve with grilled salmon. how about a dill, garlic and citrus cream sauce?
make a cream sauce : milk and a little thickener like butter and flour together. add fresh dill weed and the zest of lemon lime and oranges.
Use some white or red wine. Throw in your tarragon or dill and capers and just reduce (boil away) by 3/4. Add some heavy whipping cream and let simmer until it is as thick as you want. If you let it go too long thought it will 'break' (the cream will seperate). You can also add some real butter after the cream reduces.
Ingredients:
bonito flakes OR instant fish broth
lemon
flour butter (and olive oil)
onions
capers OR fresh tarragon
Get or make some fish broth - 1.5 cups. You can buy bonito flakes, put them in a cup of boiling water and make instant broth.
Melt some butter 1/2 cup (you can substitute olive oil for half of it) in a pan and throw in a few chopped onions (1/2 cup) and saute them until they're translucent. Add about 2 T chopped FRESH tarragon. Add 2 T flour and blend it thoroughly, saute about 1 minute. Add 1 tsp fresh lemon juice. Add the fish broth slowly mixing vigorously with a whisk. When it thickens, add a bit more broth each time. It is finished when it has the consistency of thin gravy - light sauce. Pour it over the salmon AFTER it comes out of the grill.
You can use the same recipe, omitting the tarragon and tripling the lemon juice and adding rinsed capers after the sauce has thickened.

mix tarragon, sour cream and mayo (real) and small amount cream or half and half ; whip
add spinach, artichokes slices, mushrooms, and nutmeg if you like it
or as horseradish just a little

if it is good fresh salmon, a sauce will only kill the great flavor. salmon sauces are for older salmon that has started to smell and taste fishy, ie in restaurants
