Hello all I need a recipe for salmon steak . Can you help ???

I've made this and it's absolutely fabulous!! The butter looked odd, not incorporating well in the pan, but melted perfectly on the salmon and was truly delicious.





Ingredients:





1 cup full-bodied dry red wine such as C么tes du Rh么ne


1/3 cup finely chopped shallots (3 to 4)


1/2 cup fresh orange juice


1/4 cup balsamic vinegar


1 teaspoon tomato paste


1 Turkish or 1/2 California bay leaf


1 teaspoon finely grated fresh orange zest


1 stick (1/2 cup) unsalted butter, softened


1 teaspoon salt


1/4 teaspoon black pepper


4 (1-inch-thick) salmon steaks (each about 1/2 lb)


2 tablespoons olive oil





Preparation:





Combine wine, shallots, juice, vinegar, tomato paste, and bay leaf in a 1- to 2-quart heavy saucepan and boil over moderately high heat until mixture is thick and jamlike and reduced to about 1/3 cup, about 20 minutes. Discard bay leaf. Transfer mixture to a small bowl set in a bowl of ice and cold water and stir until cold to the touch, about 5 minutes. Remove from ice water and stir in zest, butter, 1/4 teaspoon salt, and 1/8 teaspoon pepper with a rubber spatula until incorporated.





Preheat broiler. Line rack of a broiler pan with foil.





Pat fish dry, then brush both sides with oil (2 tablespoons total) and sprinkle with remaining 3/4 teaspoon salt and 1/8 teaspoon pepper. Broil fish about 5 inches from heat, turning over once, until just cooked through, 8 to 10 minutes total.





Top each steak with 1 to 2 tablespoons red-wine butter.





Note:


Leftover red-wine butter can be chilled, covered, up to 3 days or frozen up to 2 weeks.

I like it marinated with salt, pepper, fresh dill weed, lemon juice, a little olive oil.

Citrus dill grilled salmon





1 orange, zest grated, juiced


1 lemon, zest grated, juiced


1 Tbs. olive oil


1 tsp. whole grain mustard


4 salmon steaks


2 Tbs. unsalted butter


2 Tbs. dill, chopped


Combine orange and lemon zest and juice, oil and mustard in a bowl.





Season with salt and pepper to taste.





Place salmon steaks in a dish, pour over the mixture, cover and marinate 1-2 hours in the refrigerator.





Combine butter, dill and salt and pepper to taste in another bowl.





Place on a sheet of plastic wrap and roll up to form a log shape.





Chill until firm, then cut into 8 rounds.





Preheat grill to medium.





Grill salmon 15-20 minutes, turning and basting occasionally with marinade.





Serve immediately with the herb butter rounds.
marinade it in fresh chopped basil and olive oil for a couple of hours then lightly fry it! good with boiled new potatoes with mint and salad! its my favourite
cut it in half, long ways. Cover in balsamic vinagrette. Bread both pieces. Top one piece with roasted red peppers %26amp; mozarella cheese, then layer the other piece on top. cover the top piece with some more cheese. Bake. Im not to good at explaining receipes but it's really good, I swear!

My favorite way to do it, if you can find a piece of cedar wood, the type used to panel closets or the side of a house:


Cut a piece of cedar siding just big enough for the steak to fit. Submerge the wood in water for an hour. Remove, lightly coat one side with olive oil. Put the salmon on the oil side of the cedar, sprinkle lemon zest and dill on top, and cook as normal in the oven. The moisture in the cedar will steam through the salmon giving it a delicious hint of smokey cedar.
marinate in soy sauce, old bay, lemon pepper, ginger, thyme (or rosemary) for about 20 minutes. just before putting it in the pan add some garlic and season salt (I like Lawry's) Sautee on medium to medium high in butter or olive oil. I eat it this way more than weekly. enjoy
