Crescent Salmon Loaf recipe
1 can salmon, drained and deboned
1/2 cup sour cream
3/4 cup cooked rice
1 teaspoon lemon juice
1 teaspoon salt and pepper
1 teaspoon dill seed
1/4 cup melted butter
1 package crescent rolls
2 hardboiled eggs
Mix together all but the crescent rolls and eggs. Roll out crescent rolls into one large rectangle. Put 1/2 of ingredients on top of crescent roll. Sprinkle hard-boiled eggs (chopped) over mixture. Then put remaining 1/2 of mixture over eggs; bring up sides of crescent roll to form loaf. Pinch together and place on cookie sheet. Bake at 375 degrees F for 20 to 25 minutes. SOUR CREAM SALMON LOAF
1 (14 1/2 oz.) can salmon
1 (8 oz.) pkg. sour cream
1/2 c. melted butter
1 beaten egg
2 1/2 c. crushed corn flakes
Drain off half of liquid in can of salmon. Combine all ingredients and place in a loaf pan. Bake 40 minutes at 350 degrees. If firmer texture is desired, use less butter and add 1 more egg.
A TASTY SALMON LOAF, two versions
VERSION ONE:
1# can salmon: juice, bones and all
3/4 - 1 cup bread crumbs
2 egg whites, slightly beaten
1 Tbsp. dry butter buds
3 tsp. Fresh lemon juice
2 dashes Tabasco
1/4 cup finely chopped parsley
Salt %26amp; freshly ground pepper to taste
Mix all together and put in oiled loaf pan. Bake at 375 degrees for 40 - 50 minutes. Let sit 10 minutes before cutting. SERVES 4.
VERSION TWO:
1# can salmon: juice, bones and all
4 - 5 pieces whole wheat bread made into fine crumbs
2 eggs
2 Tbsp. dry butter buds
2 Tbsp. Fresh lemon juice
2 dashes Tabasco
1/4 cup finely chopped cilantro
1 can black beans, drained about half
1 Tbsp. finely chopped garlic
1/2 cup finely chopped onion
Freshly ground pepper to taste
Put eggs, butter buds, lemon juice and black beans into food processor and blend well. Add garlic, onion and cilantro and blend. Dump salmon into large bowl and flake well. Add bean mixture, then bread crumbs, and stir well. This will be very ';wet';!
Put in well oiled large loaf pan. Bake at 325 degrees for 60 - 75 minutes. Let sit 15 minutes before cutting to firm up, or it won't come out of the pan well at all! 6 GENEROUS SERVINGS.
Try either my HERBED CARROTS or POTATOES AND CELERY recipe with this for a great meal. Of course, it would also be good with mushroom slices saut茅ed in butter mixed in with a can of drained green beans.
