Need a real good recipe for about a 4lb salmon easy and fast?

been in the fridge for two days . Need a fast and easy way to cook it and it must be moist also what to serve as a side asap pleaseNeed a real good recipe for about a 4lb salmon easy and fast?
Cooking a whole salmon


Description


A classic dish good at buffets and for large number of guests. Can be prepared in advance.





Ingredients


1 whole salmon, 3-4kg/6.5-10lb in weight, gutted and cleaned


4 sprigs fresh parsley


陆 lemon, sliced


2 bay leaves


150ml/5fl oz dry white wine


2 tbsp vegetable oil





Method


1. Heat the oven to 190C/375F/Gas 5.


2. Take 2 large sheets of foil and place on top of each other in a roasting tin. Spread the oil on the foil and place the salmon on top.


3. Put the parsley, lemon slices and bay leaves into the body cavity. Fold the edges of the foil together but just before sealing, pour in the wine.


4. Bake the fish for 50-60 minutes.


5. Serve hot or cold. If you want to serve it cold, allow the fish to cool in the parcel and then gently peel off the skin and garnish with thinly sliced cucumber and watercress.Need a real good recipe for about a 4lb salmon easy and fast?
I grill my salmon, over mesquite. As far as sides, I'm partial to rice.
here's my favorite way to cook salmon and it's really simple and doesn't take long to prepare:


1- put your salmon skin side down on a piece of tin foil that is large enough to wrap it with. (pam spray will help keep it from sticking to the foil once it's done)


2- put a thin layer of butter on the salmon and season with whatever you like. (i usually just use some steak seasoning and salt and pepper)


3- slice up an onion and potato. be sure to slice the potato thinly or it won't cook all the way through.


4- lie the potatoes and onions on top of the salmon and wrap it up.


5- cook it on the grill or in the oven (~425 degrees) until the salmon is cooked all the way through and the onion and potatoes are tender.





of course you can always add whatever spices or seasonings you like or even lemons, but this is what works for me. rice is a good side dish. there you go....hope you like it if you try it :)
