I love the taste of salmon, and pretty much a purist - butter, dill or rosemary %26amp; lemon juice - horseradish, saki or white wine. You could use a basil or sun-dried tomato pesto or gremolata

Try poaching it instead and making a tarragon sauce with it, totally yummy. That is one of my husbands favorite ways to have it. Just remember the fish doesn't take long to cook. The nice thing about doing it this was is that you can serve it either warm or at room temperature, both ways are good.
One of the best I have is:
1 cup mayo
1/2 cup plain yougurt
1-2 teaspoons dill
1/8 cup lemon jiuce
salt and pepper to taste
Mix all ingredients together and spoon over salmon. Just bake salmon in teh oven at 350 for 20-30 minutes or until done.

I love salmon. Here are 2 Chinese recipes:
1. Steamed salmon
Place salmon in a heatproof dish that'll fit into a sauce pan or steamer.
Sprinkle salt on (roughly half teaspoon to one lb in weight of fish)
Add a dash of black pepper
Steam until fish is cooked through
Next, heat a wok and add one to two tablespoons of sunflower oil or ground nut oil until the oil is smoking slightly
Add shredded spring onions/scallions and shredded ginger. Cook for a few seconds until crispy.
Take out the fish, then pour a few drops of light soy sauce and sesame oil over it, followed by the spring onion mix.
Serve immediately with rice and stir fried vegetables.

2. Salt and chilli salmon
Cut the salmon into 5cm long cubes, lightly flour the pieces by rolling in flour.
Heat wok and add 2 tablespoons oil. Fry the fish on all sides.
Whilst the salmon is cooking, in a small bowl, mix together one teaspoon salt, one teaspoon minced garlic, one teaspoon chilli flakes, half teaspoon cracked black pepper, teaspoon of sesame oil and a few drops of chilli oil.
Remove cooked fish.
Pour chilli mix into the wok and heat until it smells aromatic. Be careful that the garlic doesnt burn.
Immediately add the fish, and stir to coat the pieces in the seasoning.
Pour onto a plate and squeeze over some lime or lemon juice.
I like to make it like tuna fish and eat it on crackers for parties as a snack, it's good, try it.
I no this sounds really disgusting but it actually quite delicious!All my family thinks so anyway!lol

ingredients
Salmon fillets
garlic powder
mustard
dried mixed herbs
garlic butter
pepper
1. First get the salmon and spread an even layer of mustard on top.
2. Then sprinkle some pepper , garlic powder, and mixed herbs on top
3. Then add chunks of garlic butter on top , wrap each steak seperately in tin doil and cook in the oven for aroun 10 mins
4. Then open the tinfoil and put them back in for another 3-5 mins
5. take out and eat with jacket potatoe and a nice salad.

SALMON PICCATA
1/2 cup water
2 tsp. lemon juice
1/8 tsp. chicken broth granules
2 (4 to 6 oz. each) Salmon steaks or fillets, thawed if necessary
1 tbsp. butter
1 tbsp. capers
black pepper, to taste
chopped parsley, for garnish
cooked noodles, optional
Bring water and lemon juice to a boil in medium-sized skillet. Stir in chicken granules. Reduce heat to a simmer and place salmon steaks or fillets in pan. Cover and simmer over low heat, 10 minutes per inch of thickness, measured at thickest part, or until fish flakes when tested with a fork. Remove salmon from pan; keep warm. Boil remaining liquid in pan until it reduces to approximately 1/4 cup. Whisk in butter and stir in capers. Spoon sauce over fish. Season with pepper and sprinkle with parsley. Server on a bed of cooked noodles, if desired. Makes 2 servings. Note: Recipe may be easily doubled.
