Does any one have a good recipe for baked or broiled salmon?

Louisiana Salmon





2 pounds of salmon fillets cut into 8 ounce pieces





1 oz. fish seasoning





2 oz. Butter





6 oz. White Wine





2 Minced garlic cloves





1/2 tsp. Dill Weed





2 Lemons





After cutting the fish into thick fillets, place them in a roasting pan. Sprinkle to taste with the fish seasoning. Cut and squeeze a fresh lemon over the fish. Add the remainder of the ingredients to the pan. Preheat the oven to 400 F. Place the pan in the oven and bake for 15 minutes (or until the fish flakes with a fork). Serve with remaining lemon cut into wedges.Does any one have a good recipe for baked or broiled salmon?

GRILLED SALMON WITH TANGY CITRUS SAUCE





3/4 c. French's庐 Creamy Dijon Mayonnaise, divided


2 tbsp. orange juice


2 tbsp. limejuice


1 tbsp. each grated orange and lime zest


1 tbsp. minced fresh tarragon


4 (1-1/2 pounds) salmon fillets, about 1/2-inch thick (OR red snapper, tilapia or sea bass fillets)


Salt, pepper and paprika to taste





Combine 1/2 cup mayonnaise, orange and lime juices, orange and lime zest, and tarragon in small bowl; set aside. Season fish with salt, pepper and paprika to taste. Baste with remaining 1/4 cup mayonnaise. Cook on a well greased grill or broiler (medium direct heat) 5 minutes per side until fish is opaque in center, turning once. Serve with sauce and grilled asparagus.





BAKED SALMON-IN-A-SNAP





Nonstick cooking spray


4 1-inch-thick salmon fillets (about 1 lb.)


1/2 tsp. lemon-pepper seasoning or 1/4 tsp. freshly ground black pepper


1-2 tsp. reduced-sodium soy sauce


1 medium orange, halved and very thinly sliced


2 c. small broccoli florets


1 c. reduced-sodium chicken broth


3/4 c. water


1 tsp. bottled minced roasted garlic or minced garlic


1 c. couscous or hot cooked rice





Lightly coat a shallow baking pan with cooking spray; set aside. Season salmon fillets with lemon-pepper seasoning. Arrange fillets in prepared pan. Drizzle with the soy sauce. Top with orange slices. Bake, covered, in a 450 F. oven for 8 to12 minutes or until fish just flakes easily when tested with a fork. Meanwhile, in a 2- qt. saucepan bring broccoli, chicken broth, water, and garlic just to boiling. Cook, covered, about 3 minutes or until broccoli is barely crisp-tender. Stir in couscous. Remove from heat; cover and let stand 5 minutes. Serve fish over hot cooked couscous and broccoli. Makes 4 servings.
*******HERB BASTE FOR SALMON


2 tbsp. olive oil


2 tbsp. melted butter


1 tbsp. fresh chopped basil


1 tbsp. fresh chopped parsley


1 tsp. grated lemon peel


Salt and pepper to taste


4 salmon steaks or 1 salmon fillet (about 1 lb.)


Combine all ingredients except salmon. Baste salmon with mixture, cooking according to desired methods. Makes 4 servings.


MICROWAVE:


Brush with baste; place on microwavable roasting rack. Cover with wax paper; cook on high until fish flakes. Rotate once during cooking period and baste with additional marinade.


BAKE:


Brush with baste and bake in preheated 450 degree oven, about 10 minutes per inch of thickness. Brush with baste as needed.


BROIL:


Brush with baste and boil 4 to 6 inches from heat, 10 minutes per 1 inch thickness. Brush with baste as needed.





*******SALMON FILETS


1 1/2 lb. salmon fillet per person


1 pat of butter on each side


1 hand squeeze of lemon on each side


Sprinkle of parsley per side


3 sprinkles of garlic salt to taste per side


3 sprinkles of pepper per side


3 sprinkles of paprika


Put salmon fillets on tin foil covered broiler pan. Put butter, lemon, parsley, garlic salt and pepper on top. Sprinkle on paprika. Broil 7 minutes each side. Delicious.
Sprinkle all of the following on top of a salmon fillet (atlantic is good): 1 tsp minced garlic, half chopped small onion, half chopped tomato, squeeze half lemon, salt and lots of fresh pepper. Broil till middle is just done. Reseason. Serve with fresh vegetable and rice or potato of some kind.
I have a sauce:





Take the zest and juice from 1 lime, 1 lemon and 1 orange, add a pressed garlic, and reduce it over high heat to 2-3 TBSPs, remove from the heat, spear cubes of cold butter on the end of a fork and stir vigorously. Beat in 1/2 cup altogether. Serve over broiled or baked salmon (don't forget to season the salmon.)





Salmon needs 12-15 minutes at 450 degrees, or a little less under the broiler. If you are broiling, brush the salmon with a little olive oil first, start skin side up (even if you have removed the skin) and turn once after about eight minutes.

1/4 C. Lemon juice


1 tsp. Garlic powder


2 tsp. Chopped chives


1/2 tsp. Paprika


4 (4 to 5 oz.) Salmon steaks


Mix all ingredients and pour over fish. Refrigerate 1 hour; turn steaks once. Remove fish from marinade. Grill (Broil) on lightly greased rack 6 inches from heat for 5 minutes. Turn; brush with marinade. Grill (Broil) 5 to 8 minutes longer or until fish flakes easily when tested with fork.
