Salmon with Roasted Cherry Tomatoes
2 cups cherry tomatoes
1 1/2 teaspoons chopped fresh thyme
1 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
2 garlic cloves -- minced
2 salmon fillets -- (6-ounce) (about 1 inch thick)
2 tablespoons fresh lemon juice
Preheat oven to 400掳. Combine first 6 ingredients in a jelly roll pan coated with cooking spray; toss to coat tomatoes. Bake at 400掳 for 15 minutes. Add fish to pan. Bake an additional 10 minutes or until fish flakes easily when tested with a fork. Serve the tomato mixture over fish. Drizzle with lemon juice. Serves 2
Lime-Scented Rice
3/4 cup water (or chicken broth)
1/2 cup rice
2 tablespoons fresh lime juice
6 sprigs cilantro, tied together with kitchen string
1/2 teaspoon salt
Bring water (or broth), rice, lime juice, cilantro, and salt to boil in a small saucepan. Reduce heat to low; cover and cook 20 minutes Discard cilantro before serving. Serves 2

Walnut Rice Salad --
INGREDIENTS
5 cups cooked rice
1 1/2 cups chopped walnuts
1 large tart apple, chopped
1 cup chopped green onion
1 large carrot, grated
1/2 cup minced fresh parsley
DRESSING:
1/3 cup lemon juice
2 tablespoons honey
1 tablespoon mayonnaise
2 garlic cloves, minced
3/4 teaspoon salt
1/2 teaspoon curry powder
1/2 cup vegetable oil
DIRECTIONS
Combine the first six ingredients. Combine the juice, honey, mayonnaise, garlic, salt and curry powder; gradually whisk in the oil. Just before serving, drizzle over rice salad.

INGREDIENTS
1 1/2 cups cold cooked rice
2 green onions, chopped
1 small carrot, diced
1/4 cup fresh or frozen peas, thawed
4 teaspoons soy sauce
1 tablespoon minced fresh parsley
1 tablespoon vegetable oil
1 egg, beaten
salt and pepper to taste
DIRECTIONS
In a skillet, cook and stir the rice, onions, carrot, peas, soy sauce and parsley in oil until onions are tender and rice is heated through. Add egg; cook and stir until egg is completely set. Season with salt and pepper.
