Salmon Patties
2 eggs
1/2 cup milk
1 tablespoon instant minced onion
1 1/2 cups salad croutons, crushed
16-oz. can salmon, drained and flaked
2 tablespoons butter or margarine
In large bowl, beat eggs slightly. Stir in remaining ingredients except butter. Firmly shape into four 1/2-inch thick patties. In large skillet, melt butter. Saute patties over low heat until browned. Serve with creamed peas, or a mustard or dill sauce.

yes... use half salmon (fresh caught, Alaskan) and half lump crab meat.... mayo, diced red pepper, lemon juice, florida bay, butter and panko.... yummy

SALMON CAKES
1 1/2 lbs. fresh salmon steaks 1-inch thick
1 1/4 c. fine crumbs made from unsalted crackers
1/4 c. fine chopped chives
1/8 tsp. fresh grated nutmeg
Mushroom and paprika sauce
2 eggs, lightly beaten
1/2 tsp. paprika
Salt to taste
Fresh pepper to taste
2 tbsp. chopped fresh parsley
Corn, peanut or vegetable oil
Lemon wedges
Put the salmon steaks into the rack of a steamer. Place the rack over boiling water and cover closely. Let steam 7 minutes. When fish is cool enough to handle, remove and discard the skin and bones.
Flake the fish. There should be about 3 cups. Put the fish in a mixing bowl and add the eggs, 1 cup of the crumbs, paprika, salt, pepper, chives, parsley, and nutmeg. Blend, leaving the flaked fish in fairly large lumps.
Shape the mixture into 12 cakes of more or less equal size. Coat the cakes on all sides with remaining crumbs. Heat about 2 tablespoons of oil in heavy skillet for each batch of cakes to be fried. Cook until golden brown on each side. Drain and serve hot with lemon wedges and mushroom and paprika sauce.

SALMON CAKES
1 (15 1/2 oz.) can pink salmon (bones, skin, dark flesh %26amp; water removed)
4 lg. potatoes, peeled %26amp; cut
Black pepper to taste
Onion powder to taste
Garlic powder to taste
1 med. onion, chopped fine
1 egg
Flavored bread crumbs
Butter for frying
Flake salmon in a large bowl and set aside. Boil potatoes until soft. Drain and mash adding onion powder, garlic powder and salt if desired. Add onion, whole egg and enough bread crumbs to absorb egg. Add the salmon to this and mix very well to evenly distribute the salmon. Form into patties 1/4'; thick and 1'; round. Pat each salmon cake into bread crumbs. Fry over medium heat in butter until dark brown, turning frequently.
OR
SALMON CAKES
1 can salmon
1 c. corn flakes
1 lg. minced onion
1 egg
1 tbsp. mustard
1 tbsp. mayonnaise
Broth from can, as much as needed
Mix all the ingredients together into cakes. Cook in broiler until brown on both sides.
