Any one got a good recipe or sauce or accompaniment to a Salmon fillet?

I don't eat fish myself so i dont really know what goes well with it. I was wondering if anyone could help me out with an idea of what i can do with this salmon fillet that i bought for my husband.. cover the top of the salmon fillet with boursin (garlic and fine herbs) cheese. Pop under the grill till the cheese has melted.

Watercress sauce goes with salmon, as does hollandaise, also spinach sauce .
i like salmon with butter, lemon juice and a wee bit dill.

I like putting some olive oil, salt and pepper on it and cooking it in the oven for 15mins at 180c. For an extra treat, cover the top with a bit of pesto and breadcrumbs.
1c. sour cream


1Tbps. Dill


3Tbps. Lemon Juice


combine all and pour over salmon. bake at 350 degrees until fish is done.
A simple one which works well is to combine creme fraiche with a little lemon juice, black pepper and finely chopped watercress and/or dill.





It is a cold sauce, can be made ahead and is very easy. It works well with hot and cold salmon.

Buerre Blanch. It's basically a butter sauce with shallots, white wine and lemon. You saute the shallots, melt in the butter and whisk in the wine and lemon. It doesn't keep long, so you have to use it pronto.
Try a lemon flavoured cous cous and steam the salmon and lay on top of the cous cous. Serve with a tomato and cucumber salad (mix them with olive oil and balsamic vinegar). This is really nice.





You could also do a creamy white wine sauce with boiled new potatoes and mange tout or something. You can buy creamy sauces from a supermarket or corner shop or something. There's a nice one in a red packet that I forget the brand name of but its mushroom and garlic and goes really well with salmon.

Wrap the salmon fillet in tin foil with some chopped chives (or parsley, or dill) and bake in the oven for 20mins @ 180 degrees C.


Serve with potato wedges for an easy straight forward meal.





Alternatively, pan fry some spinach and the salmon gently, until the salmon begins to flake, then add 200-300g of cream cheese and stir until it becomes a rich creamy sauce. Serve with pasta for a simple but delicious meal.





Or you could just serve the salmon fillet (pan fried) on a bed of salad (try adding cherry tomatoes and avocado for a nice fresh contrast to the slight fattiness of the fish).
Here is a recipe I came up with a few weeks ago. I hope you like it. It is from my own site of personally created, healthy recipes (link below article.)





Per person, you will need:





1 salmon fillet (skin on - very important)


5 or 6 small new potatoes (whole and unpeeled)


Handful of frozen peas (or fresh from garden, if available)


2 tbsp double cream (not single - it will split)


1 tbsp of dry white wine


2 pinches of dried dill


Knob of unsalted butter


Plain flour for dusting


Salt/freshly ground black pepper


Olive oil for frying





Put your potatoes on to boil in lightly salted water. They should take about twenty to twenty-five minutes. About five minutes before the potatoes are ready, dust the skin side of the salmon only with seasoned plain flour and place skin side down in to a warm frying-pan with a little olive oil. Frozen peas generally take two and a half to three minutes. Be guided by the instructions on the pack and judge when to put them on accordingly.





Drain the potatoes, add the knob of butter and a pinch of dill. Swirl them around in the pan to ensure they are all well coated. When the salmon appears from the side to have cooked just over half way through, turn the pan off, remove it from the heat and turn the fillets over. They will finish cooking in this way while you make your sauce.





Put the white wine in to a small saucepan and bring it up to a gentle simmer. Add the cream and a pinch of dill and stir well until it comes back to a simmer. Take the salmon fillet from the pan and place it skin side up on the plate. The crisp skin should peel off easily with the aid of a knife, revealing glossy flesh underneath. Add the potatoes and the peas, then gently spoon the sauce over the fish.
mmm I love fish, and some of the suggestions are making me hungry ;-)





I found a gorgeous meal in a pub at the new forest, it was salmon fillet, brushed with green pesto and round of goats cheese, grilled, seved with new pots and a fresh salad....

White sauce i don't no what is in it but I have seen plenty of people eat it with fish you can buy a ready made packet
