Dijon-Crusted Salmon and Roasted Asparagus
2 slices French bread
1 tbsp snipped fresh parsley
1 tbsp plus 1 tsp Garlic Oil or olice oil, divided
1/4 cup Dijon mustard
1 garlic clove pressed
1/2 tsp salt
1/4 tsp coarsely ground black pepper
4 skinless salmon
1 lb asparagus spears
if wanted additional garlic oil, salt and pepper
1. Preheat over to 450 degrees. Chop bread and snip parsley. Combine the bread crumbs and 1 tbs of oil on HIGH 1 minute or until bread crubs are golden brown and crips, stirring after 30 seconds. Cool slightly and stir in parsley.
2. Whisk mustard, pressed garlic, salt, black pepper, and remaining oil. Place the salmon in a large pan spread the mustard mixture evenly onto each fillet. Press bread crumbs into the mixture.
3. Trim asparagus. Cut half crosswise and brush additional oi, season with salt and pepper. Arrange the asparagust next to the salmon in a single layer. Bake 11-13 minutes until it falkes easily and crust is golden brown.
Garam Masala Salmon
Raita
2 tsp grated fresh gingerroot
1 lemon
3/4 cup plain yogurt
1 garlic clove pressed
1/8 tsp ground cumin
1/4 tsp salt
1 tbsp snipped fresh cilantro
Salmon and zucchini
2 boneless skinless salmon fillets
1/4 tsp salt
2tsp olive oil
1/2 tsp garam masala spice blend
3 small zucchini
1. For raita, grate gingerroot into a bowl using a grater. Juice lemon to measure 1 tsp juice; add to bowl. Add yogurt, pressed garlic, cumin and salt; whisk well. Snip cilantro and set aside in a nother bowl.
2. For salmon, season salmon with salt; place into a mixing bowl with 1/4 cup of the raita, turning to coat
3. As salmon marinates, add oil and garam masala to pan heat over medium heat 1-2 minutes or until fragrant. Add salmaon, cook 3-4 minutes or until browned. Turn salmon over; cook 3-4 minutes again until it flakes.
4. Meanwhile, cut zucchini lenthwise into long ribbons.
5. Place salmon and zucchini into serving plates. Stir cilantro into remaining raita and drizzle over zucchini just before serving.
Oven Baked Salmon
Ingredients
1 1/2 lbs fresh salmon
1/2 teaspoon black pepper, freshly ground
1 lemon, juice of
1/2 lemon, cut into thin slices, seeds removed
1 teaspoon kosher salt or sea salt
1-2 tablespoon dried parsley
6 tablespoons extra-virgin olive oil
Directions
Run salmon under cold water and pat dry with paper towels, set aside.
In a large oven-proof baking dish add 3 tablespoons of olive oil and place the salmon in the baking dish.
Sprinkle the fish with the remaining 3 tablespoons of olive oil.
Add in this order. The lemon juice, black pepper, kosher salt, dried parsley and place the lemon slices on top of the salmon.
Cover with foil and bake in a preheated 350 degree oven for 45minutes or until cooked through and tender.

DIRECTIONS
Stir together the garlic powder, basil, and salt in a small bowl; rub in equal amounts onto the salmon fillets.
Melt the butter in a skillet over medium heat; cook the salmon in the butter until browned and flaky, about 5 minutes per side. Serve each piece of salmon with a lemon wedge.
I like to sear it in a medium-hot pan with a little olive oil.
Preheat oven to 375
Salt %26amp; pepper the salmon first, then add to hot oven safe pan with olive oil %26amp; do not disturb for 2 minutes. After 2 minutes, flip %26amp; cook for 1 minute longer.
Transfer pan to oven for 5 minutes to complete cooking.
This sear-roasting method is the best way I found to keep the salmon moist %26amp; yummy.
I like to top mine with steamed spinach, or even some store bought tzaziki or barbecue sauce.
Baked Salmon --
INGREDIENTS
2 cloves garlic, minced
6 tablespoons light olive oil
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped
2 (6 ounce) fillets salmon
DIRECTIONS
In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a medium glass baking dish, and cover with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally.
Preheat oven to 375 degrees F (190 degrees C).
Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

Maple Salmon --
INGREDIENTS
1/4 cup maple syrup
2 tablespoons soy sauce
1 clove garlic, minced
1/4 teaspoon garlic salt
1/8 teaspoon ground black pepper
1 pound salmon
DIRECTIONS
In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
Preheat oven to 400 degrees F (200 degrees C).
Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.

Asparagus Avocado Medley --
INGREDIENTS
1 pound fresh asparagus, trimmed and cut into 1 1/2 inch pieces
8 fresh mushrooms, sliced
1 large ripe avocado, peeled and cubed
1 medium zucchini, diced
1 large tomato, seeded and chopped
1 medium red onion, sliced
2 tablespoons lemon juice
2 tablespoons olive or canola oil
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1 garlic clove, minced
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
DIRECTIONS
Place asparagus and 2 tablespoons water in a microwave-safe dish. Cover and microwave on high for 3-6 minutes or until crisp-tender, stirring once; drain and cool.
In a large bowl, combine the asparagus, mushrooms, avocado, zucchini, tomato and onion; toss gently. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over salad and toss gently to coat. Cover and refrigerate until serving.

Garlic Broccoli --
INGREDIENTS
1 1/2 cups fresh broccoli florets
1 1/2 teaspoons sesame oil
1 teaspoon canola or vegetable oil
1/8 teaspoon crushed red pepper flakes
1 tablespoon soy sauce
2 garlic cloves, minced
3/4 teaspoon sugar
3/4 teaspoon lemon juice
DIRECTIONS
Place 1 in. of water in a saucepan; add broccoli. Bring to a boil. Reduce heat; cover and simmer for 5-8 minutes or until crisp-tender.
Meanwhile, in a small saucepan, heat the sesame oil, canola oil and red pepper flakes over medium heat for 2 minutes or until hot. Stir in the soy sauce, garlic, sugar and lemon juice. Cook and stir for 1-2 minutes or until sugar is dissolved. Remove from the heat.
Drain broccoli and transfer to a serving bowl. Pour garlic sauce over; toss to coat. Serve warm or chilled with a slotted spoon.
Maple glazed salmon always goes over well with us. The recipe will vary depending on how many people you're making it for.
Marinade:
1/4 cup of maple syrup
1/4 cup of soy sauce
1 clove of garlic
Mince the garlic, and mix the syrup and soy. TASTE!!! If it's too salty or too sweet (as can happen with different grades of soy and maple syrup) balance it out until you like the flavour.
Put the salmon fillets into a ziploc bag, and pour in the marinade. Let sit for about an hour.
Grill the salmon in a pan, or bake in the oven (your choice). Baste with more marinade from the bag to candy coat the salmon (just make sure the marinade gets cooked as it's been on raw fish).
Serve and enjoy!

grill it, top it with a knob of orange-thyme butter (soft butter with orange zest and juice and thyme all mixed up, rolled in wax paper and chilled) and served with a shaved fennel and orange salad.
Make some grilled salmon and top it off with this cilantro cream sauce. We tried this recipe not too long ago, it was perfect with salmon!!

I always like seasoned asparagus as a side dish to fish.
Just broil or pan fry it in some lemon juice, butter, garlic, and pepper.
