Salmon and Broccoli Alfredo With Pasta





12 ounces egg noodles


2 (10 ounce) packages frozen chopped broccoli


2 cups readymade alfredo sauce


2 (6 ounce) cans boneless skinless pink salmon


seasoning, to taste





In a large stockpot, cook noodles as directed on package.


While noodles are cooking, flake and drain salmon.


Yes, this is necessary!


I was new to canned salmon, and so I didn't believe the instructions, but I soon discovered that salmon truly does come in huge, icky lumps.


When noodles are 2 to 4 minutes away from being done, add the broccoli to the water.


This will probably stop the water from boiling, so those 2 to 4 minutes might end up closer to 8 to 10 minutes instead!


This happened to me, but, amazingly, even with 8 extra minutes of cooking time the broccoli did not become mush.


Drain pasta and broccoli, reserving about a cup of the cooking water.


Return noodles and broccoli to pot.


Add Alfredo and seasonings to taste (I recommend lots of black pepper and--even better--Trader Joe's Sun-Dried Tomato Seasoning Splash, which is sold, not surprisingly, at Trader Joe's-- about 8 teaspoons of it).


If the sauce is too thick, and it likely will be, dribble in the reserved cooking water slowly until the consistency is right.


And you're done.


Woo hoo.


You just opened some cans, and a jar, and a box, and a package, and now you have yummy pasta.

Buy (even better make your own) fresh pasta. Bake the salmon in tinfoil for 20 mins max - take it out and flake the flesh with a fork. Cook your pasta and drain it. (Keep tasting it to make sure it isn't over done - it needs to have some bite).


Add the flaked salmon, a touch of ground black pepper and a few lightly toasted cumin seeds (cumin and salmon are a perfect combination!) Then add a very high quality olive oil until the pasta glistens. Serve it straight away with some crusty, toasted wholemeal bread.

*******SHRIMP AND SALMON FETTUCCINE ALFREDO


1 (10 oz.) pkg. fettuccine noodles


1 lb. salmon fillet


1 lb. med. shrimp


8 oz. alfredo sauce


2 or 3 tomatoes


3 tbsp. basil


3 oz. Parmesan cheese


1/8 tsp. garlic powder


Lemon juice


Squeeze lemon juice on salmon. Bake salmon in pan (without water) for 20 to 25 minutes at 450 degrees. Remove skin and break into chunks after cooking. Clean and boil shrimp; drain. Boil fettuccine according to package instructions. Strain noodles. Heat alfredo sauce in microwave. Combine noodles, alfredo sauce, salmon, shrimp, Parmesan cheese, garlic, and basil. Toss. Add uncooked, cut up tomatoes. Toss and serve.
CREAMY SALMON AND PASTA





1 (15 1/2 oz.) can salmon


2 tbsp. minced shallots or onion


2 tbsp. olive oil


Heavy cream


1 tsp. Dijon mustard


1/8 tsp. tarragon, crushed


8 oz. lg. pasta twists, cooked and drained


4 c. lightly packed sliced fresh spinach or 1 (10 oz.) pkg. frozen chopped


spinach, thawed and squeezed dry


Grated Parmesan cheese


Salt and pepper





Drain salmon, reserving liquid. Break into large chunks. In large skillet, saute shallots in olive oil until tender. Add cream to reserved salmon liquid to equal 1 cup. Add to skillet with mustard and tarragon; cook over medium heat for 2 minutes or until slightly thickened.





Add pasta, spinach and 1/4 cup Parmesan cheese; toss gently. Stir in salmon. Season with salt and pepper to taste; heat thoroughly. Serve with additional Parmesan cheese if desired. Makes 6 servings.





Sour cream can be added for more moisture.

This recipe is a quick in easy way to prepare salmon and pasta in under 30 mintues





3 or 4 / 5oz Boneless Salmon Fillets (No Skin)


1- 12oz Can of Crushed Tomato's


1- 12oz Package of Rainbow Color Bow Tie Pasta


1 Cup of Merlot Red (Dry or Sweet)


2 tbsp of Balsamic Vinger


1/2 Cup of Heavy Cream


1/3 - 1/2 Cup of Graded Parma


2 Medium Diced Shallots


1 Clove of Minched Garlic


1 tbsp of Tarragon


2 tbsp of Extra Virgin Olive Oil


Korsher Salt/Sea Salt to Taste


Fresh Ground Pepper to Taste


Pinch of Sugar





Lightly Saute Shallots in Olive oil for until tender.


Add in Crushed Tomato's, simmer on medium heat for approx 5 mins.


Added in Red Wine, Garlic, Salt, Pepper to taste.


Simmer again for 2 mins.


Reduce heat to Medium low.


Add Salmon and pouche on both sides until tender but not over cooked.


Remove Salmon and place on platter and cover.


Increase heat to medium high.


Add in Balsamic Vinger and allow sauce to reduce by 1/3.


Add in Heavy cream and allow to blend with sauce, should be a rosey red color.


While Sauce is reducing cook pasta until bite tender.


Once sauce is cooked, cut up Salmon into cubes and add abck into sauce.


Add in Tarragon and Cheese and mix well.


Add in a pinch of sugar to cut down on acid of tomato's and vinger.


Blend in pasta and cheese.


Add additional salt or pepper to taste and remove from heat.





When plating, make sure to reserve some sauce to coat.


Serve with crunchy frech loaf or italian bread and enjoy.
Vidalia Onion Salmon with Rotini Noodles








Ingredients


1/2 cup Vidalia庐 Onion Dressing


10.75 oz. can cream of mushroom soup


14.75 oz. can salmon


6 oz. prepared rotini pasta





Directions


Combine first 2 ingredients in medium saucepan. Add boned salmon; heat through. Toss with hot rotini. Makes 3-4 servings.

I had never used Salmon before with pasta but this turned out good.


Heat about 2 tbls olive oil in frying pan, add about 3 cloves garlic, finely chopped, about 1/2 small onion, finely chopped. Small can of finely chopped black olives and a bout a tsp of italian seasoning (oregano,basil ect). let this warm until onion and garlic is soft. Add can of salmon with liquid. Stir and heat until warm. Now add cooked spaghetti, heat through, salt and pepper well . If needed add some pasta water and more olive oil. Sprinkle with parm cheese and serve. takes about 10 minutes and is delish!!!
